*Beef/ Chicken Pho
Pho is one of the most traditional food of Vienam made by fresh beef/ chicken bones, special rice noodles, onions, cinamon, star anise, sawleaf, basil, etc.
My family use chicken/ beef sauce for a hidden taste for Pho! We eat Pho almost everyday.
*Green Papaya Salad (Goi du du)
When all family's members gather, we make Green Papaya Salad which is so fresh and healthy for all relatives. Ingredients include shrimp, pork, mango, papaya, carrot, herbs, peanuts and our secret sauce. We have our own recipes for the best Hoi An sauce!
*Xeo Cake (Vietnamese Rice Pancake)
Especially and ideally in cold weather, the sound of the cake making "xeo xeo" takes us to the nostalgie. The best food of our life. Ingredients include mushrooms (or shrimps), green bean sprouts, herbs, rice milk and of course the famous sauce by us.
*Fish in claypot
In our family, we eat fish for health, so we try to make new dishes from kinds of fish. We want foreign travellers to know the deliciousness of fish in claypot!
In this cooking class, we cook Vietnamese food together. Let's try the Pho first!
Place the beef bones in a large pot filled with enough water to cover. Bring to a boil over a high heat. Boil the bones on a high heat for 5-10 minutes. The impurities will rise to the top. Discard the liquid, clean out the pot. Rinse the bones well under clean running water. Return them to the clean pot and cover with fresh water. This is a very important step to keep the broth clear and it will save your time skimming off the scum later.
Onions, Gingers, star anise, cinnamon need to be charred. Charring them directly over the flame results in deeply blackened vegetables that still retain all their moisture and flavor.
Put all charred ingredients to the pot. Add 1 tbsp salt, 2 tbsp chicken powder, 1 tsp black pepper and 1 tbsp sugar (preferably rock sugar, but caster/brown sugar is fine, too).
Now all you need is to simmer, simmer, simmer away (the more you simmer, the more the broth tastes nicely).
Divide the noodles among warmed soup bowls, top with the poached bean sprouts, then top with the poached sliced beef fillet by the broth itself. Pour over the hot soup mixture (the heat will gently cook the meat). Serve garnished with chilli and fresh herbs. Eat it hot!

People have said, “the quickest way to explore a culture is getting to know its cuisine,” so here We are today to proudly be your guides and your friends, who can help you master the basic recipes of Vietnamese dishes. The recipe is inspired by what is growing in the garden and seasonal products we find at the market. Our main goal is to create a new Vietnamese cuisine experience using only fresh and home made ingredients. After years of discovering what We really want to do and challenging ourselves in different fields. We have finally achieved it here with Jolie Cooking class.
