*Beef/ Chicken Pho
Pho is one of the most traditional food of Vienam made by fresh beef/ chicken bones, special rice noodles, onions, cinamon, star anise, sawleaf, basil, etc.
My family use chicken/ beef sauce for a hidden taste for Pho! We eat Pho almost everyday.
*Green Papaya Salad (Goi du du)
When all family's members gather, we make Green Papaya Salad which is so fresh and healthy for all relatives. Ingredients include shrimp, pork, mango, papaya, carrot, herbs, peanuts and our secret sauce. We have our own recipes for the best Hoi An sauce.
*Xeo Cake (Vietnamese Rice Pancake)
Especially and ideally in cold weather, the sound of the cake making "xeo xeo" takes us to the nostalgie. The best food of our life. Ingredients include mushrooms (or shrimps), green bean sprouts, herbs, rice milk and of course the famous sauce by us.
*Fish in claypot
In our family, we eat fish for health, so we try to make new dishes from kinds of fish. We want foreign travellers to know the deliciousness of fish in claypot!
In this class, you will learn how to make the best Vietnamese Rice Pancake!
Step 1:. Add water into 500 gram of rice flour until you reach the consistency of a batter for rice pancake (sightly thicker than milk). Set batter to rest for 15 minutes at room temperature. Add 1/2 teaspoon of turmeric powder, black pepper, salt, chicken powder, 1 egg yolk, a little bit spring onion.
Step 2: Heat up an 8 inch non-stick pan over a high heat. Add ¾ tablespoon soybean/ peanut/ vegetable oil. Add 2 very thin slices of pork and several tiny shrimps. Wait until the oil bubbles (when you put the chopstick to try). Pour ½ small ladle of batter and swirl pan to coat the middle of the pan evenly. Pour another ½ small ladle on the side of the pan and swirl to coat the edge evenly. The rice paper should be thin and of even thickness (avoid having the middle thicker than the edge)
Step 3: Reduce heat after 1 minute and cook to a crisp for 1-2 more minutes, drizzling a few drops of oil with a spoon on the outer edge of the rice paper if necessary. The delicate flavor of the dish comes from the rice and turmeric batter being fried to an even brown color. Adding a few drops of oil will prevent the rice paper from burning black.
Step 4: Flip the rice paper and crisp the other side for 1 minute. To flip, tilt the pan at a 45degree angle with your wrist and forearm. Slide the pancake towards to outer edge of the pan and flip straight up mostly with the wrist.
Step 5: Flip the rice paper again and sprinkle with 1 teaspoon of chopped green onion and about 30 bean sprouts. Fold the pancake in two like a taco to steam bean sprouts inside and transfer to a serving dish with lettuce, mint and coriander.
