Since we produce Parmigiano Reggiano cheese in our dairy, we will enjoy a vertical tasting of this world-famous cheese paired with spicy fruit jams and Balsamic Vinegar from Modena. You will discover how cheese evolves from 12 to 24 up to 36 months of maturation.
- Tortelli d'erbetta
Tortelli are the typical ravioli from the Emilia Romagna region. They are made with fresh egg pasta and filled with ricotta cheese, Parmigiano and spinach or Swiss chard. We will be making everything from scratch and enjoy them dressed with melted butter and sage: unforgettable!
- Sbrisolona cake in winter
The meal ends on a sweet note with this cake that literally means "crumbly" because it is made with almonds and served broken up in pieces. Depending on the season, it can be served with zabaione or chocolage ganache: you won't be able to stop!
