We begin with a quick tour of the Toyosu Market’s intermediate wholesale area, offering a glimpse into how fresh seafood is handled in Japan.
Then, the hands-on session begins. The instructor will first give a clear demonstration of the entire process using a farm-raised red sea bream (madai). You’ll observe how the Ikejime spike is inserted, how the spinal cord is destroyed using a wire (Shinkei-jime), and how the blood is carefully removed using the Tsumoto-style bleeding technique.
**After the demonstration, it's your turn.**
Each participant will get the opportunity to:
* Perform the Ikejime spike technique
* Insert the wire to destroy the spinal cord
* Make precise cuts for bleeding
* Handle the fish directly and feel the physical changes during the process
