You will learn how to prepare the silky batter for crispy panelle and explore the secrets of the
traditional cooking of spleen to fill the legendary Guastedda ca meusa, (tipycal bread) served in
its classic “spugghiata” style or in its richer “maritata” version.
Boiled octopus and Palermo tripe (in winter) will be the sea and land of our local street food.
And for summer barbecues, the irresistible "mangia e bevi" (snacks and drinks), spring onion
skewers wrapped in pancetta, will add a bold flavor to the table. And no tasting would be
complete without the beloved sfincione palermitano, a soft, fragrant street pizza, rich in history
and flavor. Sicilian wine will be the finishing touch
