*Beef/ Chicken Pho
Pho is one of the most traditional food of Vienam made by fresh beef/ chicken bones, special rice noodles, onions, cinamon, star anise, sawleaf, basil, etc.
My family use chicken/ beef sauce for a hidden taste for Pho! We eat Pho almost everyday.
*Green Papaya Salad (Goi du du)
When all family's members gather, we make Green papaya salad which is so fresh and healthy for all relatives. Ingredients include shrimp, pork, mango, papaya, carrot, herbs, peanuts and our secret sauce. We have our own recipes for the best sauce!
*Xeo Cake (Vietnamese Rice Pancake)
Especially and ideally in cold weather, the sound of the cake making "xeo xeo" takes us to the nostalgie. The best food of our life. Ingredients include mushrooms (or shrimps), green bean sprouts, herbs, rice milk and of course the famous sauce by us.
*Fish in claypot
In our family, we eat fish for health, so we try to make new dishes from kinds of fish. We want foreign travellers to know the deliciousness of fish in claypot!
- Fill a small saucepan half full of water and bring to the boil. Add shrimps, reduce heat, simmer for 2 minutes. Do not discard water. Remove shrimps and set them aside to cool.
- Trim fat from 50 grm pork tenderloin and return water to boil. Reduce heat and poach pork at a low simmer for about 5-6 minutes. Remove pork, set aside to cool.
- Peel and devein the shrimps. Lay the shrimps flat and cut in half horizontally. Cut tenderloin in half lengthwise. Then cut across the grain to create thin slices of pork. Set shrimps and pork aside.
- Peel all fruits with a peeler and chop them into small pieces horizontally. Put them into the liquid (a mixture of 1 part rice vinegar and ½ part sugar) for 5 minutes.
- Fill a large bowl with cold water and quickly dip and spin a piece of rice paper into the water, make sure to wet the entire piece. Shake off any excess water. Lay it down on a wooden cutting board (or big plate). Place a small half lettuce leaf at the lower end of the rice paper. Add in small quantities: julienne cucumber, mint, coriander, lemon basil, julienne carrot, julienne pork across the rice paper. Cover with a half lettuce leaf to hide the filling.
- Roll the rice paper 2/3 of the way, lay evenly 5 shrimp slices with orange side facing down. Fold the edges and add a small green onion with 3-4 leaves sticking out one inch outside of a folded edge. Continue rolling keeping good tension for a tight roll. The roll should look long and slim otherwise you have put in too much filling.

Hello, my name is Jolie, a local woman from Hoi An who loves cooking and welcoming people into my home. I grew up in a Vietnamese family where food has always been at the heart of everyday life, bringing everyone together around the table. From a young age, I learned to cook traditional home-style dishes using fresh ingredients from local markets and gardens.
Through my cooking experiences, I invite guests to explore local markets, enjoy Vietnamese coffee, and cook together in a relaxed family setting. More than just learning recipes, I hope guests can feel the warmth of Vietnamese family life, connect through food, and leave with meaningful memories from Hoi An.
