You’ll start by mixing the ingredients using a stand mixer and learning more about the process from a baker with over 15 years of experience. Discover what makes Japanese bread unique as you shape it and put it in the oven. Once ready, you can enjoy your steamy, fresh breads and keep the recipe so you can make them at home. The class will take 2.5hours to 3hours.
We will meet at a specific place which is just 15 mins away from Shinjuku Station West Exit by taxi or bus. Please make sure to arrive by 9:45am to ensure a smooth start. After everyone has arrived, we will move to my apartment.
We will begin with a short introduction about the class and the day’s bread-making plan.
You will start mixing the ingredients and knead a dough using a stand mixier. The instructor will guide you and provide tips for achieving the perfect bread step-by-step, including details about the ingredients and tools. Feel free to ask any questions at this time.
After baking, the bread needs to cool slightly. Once ready, we will take some time to enjoy the freshly baked bread. You are welcome to ask questions or take notes for your own practice at home.

For the past four years, I have taught more than 200 online bread-making lessons to students in Japan and around the world. Through these lessons, I realized that bread-making changes depending on tools, ingredients, and the environment—such as humidity and temperature.
For example, different stand mixer brands knead the dough in different ways, so the kneading time is not always the same. A warm, humid seaside location needs a different method than a cold, dry mountain area for adjusting hydration and fermentation time.
The most important skill for baking great bread anywhere is that you need to "see" the dough. It may seem difficult at first, but once you understand how the dough should look and feel, you can bake the perfect loaf every time.
