Cooking Class Menu

• Tagliatelle al Ragù:
a true Bolognese classic, this dish combines tagliatelle pasta with the iconic ragù (Bolognese) sauce. The broad, flat pasta ribbons are the perfect canvas for the luscious, meaty sauce, resulting in a hearty and deeply satisfying meal.

• Lasagne:
a world-famous layered pasta dish featuring sheets of pasta, ragù sauce, béchamel sauce, and cheese, all baked to golden perfection. Each bite offers a harmonious blend of textures and flavours, making it a beloved Italian comfort food.

• Tortellini:
delicate pasta parcels filled with a flavourful mixture: cured and ground meats, cheeses, and herbs. These small, ring-shaped dumplings are served in capon broth or with cream.

• Tortelloni Burro e Salvia:
tortelloni are larger pasta pouches, filled with ricotta cheese. When served with a simple yet exquisite sauce of melted butter and sage leaves, they create a dish that's both delicate and indulgent.

• Ballanzoni:
a unique type of stuffed pasta, featuring a filling of savoury ingredients like cheese, herbs, and meat. They are folded into a distinctive triangular shape, offering a delightful blend of flavours and textures in every bite.

• Gnocchi Fritti Ripieni:
fried dough pockets filled with various savoury fillings (mainly local ham and cheese). These delightful morsels are perfect for snacking or as an appetiser, with each bite revealing a delicious surprise inside.

• Cotolette alla Bolognese:
tender veal cutlets, dipped in a rich capon broth before being fried in butter to a golden perfection. These cutlets are then elevated with the addition of savoury Parma ham and a lavish dusting of grated Parmesan cheese, resulting in a truly indulgent Bolognese dish.

• Fresh Pasta:
a culinary delight made from simple ingredients – flour and eggs – kneaded into a dough, rolled out, and cut into various shapes.
It's a tender, homemade alternative to dried pasta, offering a rich, comforting flavour and a delightful texture. You can choose between:
o Tagliatelle
o Maccheroni alla chitarra
o Strozzapreti

• Spinach Dough:
a vibrant variation of traditional pasta dough, infused with finely pureed spinach. It adds a beautiful green hue and a subtle earthy flavour to pasta dishes, enhancing both visual appeal and taste.

• Tagliatelle:
long, flat ribbons of pasta, similar in shape to fettuccine but thinner. Their name, which means "silly cuts" in Italian, references the distinctive hand-cut appearance. Tagliatelle pairs wonderfully with various sauces (regular/wild boar ragù, porcini mushrooms, truffles, etc.) making it a versatile choice for Bolognese pasta dishes.

• Ragù:
a rich, slow-cooked, savoury masterpiece made from ground meats simmered with tomatoes, aromatic vegetables, and a touch of wine. This sauce is the heart and soul of classic Bolognese cuisine.
