• Wild Boar Stew: Tender cuts of wild caught wild-boar are slow-cooked with aromatic herbs and spices, creating a rich and flavourful dish. This hearty ensemble offers a symphony of textures and tastes that delight the senses and warm the soul.
• Polenta: a traditional Northern Italian dish made from creamy, cooked cornmeal. Pairs perfectly with savoury toppings, ideal for adding rustic charm to any meal.

Surrounded by our lands that are still used for wildlife population control, the estate is home to wild boars among other species. In our cooking course, we'll focus on preparing dishes using wild boar meat sourced directly from animals hunted on our property. These animals did not suffer in captivity, and provide an healthy and sustainable alternative to commercially raised meat.
Wild boar has been a staple in our local cuisine since the days of the Roman Empire and throughout the Middle Ages. Join us to experience this centuries-old culinary tradition.
