Cooking Class Menu

Joining this cooking class we can cook Tortelloni, one of the most traditional Italian pasta shape. We will start preparing the dough the Italian way, combining plein flour to eggs. After kneeding our dough we will prepare the filling mixing together boiled and squeezed spinach with ricotta fresh cheese, nutmet and salt to taste.
When the dough is ready we will start using the rolling pin to make a sheet of 3 mm. Then we'll cut it into 5 cm squares and put the filling in the middle of each square. Finally we'll close it giving the shape of Tortelloni.
We season our handmade pasta with butter and sage

Description
You'll be able to prepare the traditional recipe of Bolognese, the one deposited at the Chamber of Commerce of Bologna.

- 300 g beef grounded (better beef diaphragm or belly or shoulder clod)
- 300 g pork grounded
- 100 g pancetta chopped
- 50 g carrot finely cut
- 50 g finely cut celery
- 50 g finely cut onion
- 300 g tomato puréè or sanmarzano tomatoes
- 3 spoons tomato paste
- 200 ml dry red wine
- ½ glass of whole milk
- 200 ml chicken broth or bouillon
- 3 spoons olive oil
- salt and pepper to taste
- ½ glass of milk cream

I cook fresh stuffed pasta, the most traditional pasta shapes combined with vegetarian and meat sauces. I love tiramisù
