  • Miso Soup

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

  • Tsukemono

    Tsukemono

    Japanese preserved vegetables, usually pickled in a salt, brine or a bed of rice bran. They are often served to satisfy the balance with other dishes in sensory, authentic and nutritious consideration. Tsukemono are raw vegetables and think of them as a type of salad with the added benefits of lactic-acid fermentation.

    The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

Hello! I’m Michiyo, living in the historic city of Omihachiman in Shiga Prefecture, famous for its Edo-period streets and scenic waterways.

I spent 36 years in Germany as an interpreter, meeting people from many countries and experiencing diverse cultures. Cooking has long been my passion, and I have studied Japanese cuisine in depth.

In my kitchen, I offer authentic Japanese home-cooking experiences. Together, we can prepare and enjoy seasonal dishes, sushi, and traditional simmered dishes, while sharing stories about Japanese food and culture.

English and German are welcome, and I look forward to meeting guests from around the world to enjoy delicious food, conversation, and a warm, cultural exchange in the heart of Omihachiman!
