    Karaage

    Japanese fried chicken, karaage is made by marinating bite-size pieces of chicken in sake, soy sauce, ginger and garlic before coating them generously with potato starch. When fried, the starch turns into an ultra crispy shell encasing a flavorful juicy bite of chicken. Absolutely great with beer.

  • Miso Soup

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

    Tea Ceremony

    The Japanese tea ceremony is a centuries-old tradition closely tied to Zen Buddhist principles, and a popular way to experience Japanese culture. There are several variations on this ritual. At its base, powdered green tea (matcha) is prepared and served in accordance with strict rules. Oftentimes, wagashi (Japanese sweets) is served alongside the bitter green tea.

Cooking Class Information

In this cooking class, you will be asked to make a “basket bento”. I'll have you make a rice ball with rice. You will also be asked to make the classic bento menu, "Tamagoyaki'' and "Karaage''. I also make a sauce for Karaage "tartar sauce". Other side dishes change slightly depending on the season.You can also make Japanese sweets for dessert.After the meal,I demonstrate a casual style of Tea Ceremony.Then you can make a bowl of matcha by yourself .

Please take  OsakaMetro Midou line to Momoyamadai station. It takes 30 mins from Nanba station. In front of south ticket gate at Momoyamadai station. Exit the south ticket gate to the right and walk straight. I'll be waiting at the top of the stairs 15mins before the starting time

You can choose drink from either green tea, water or homemade juice! I will explain you about what we are going to make according to my recipe. I will give you my recipe as a gift!

Cook Tamagoyaki and Karaage.You make dashi with bonito and kelp.Add Wakame seaweed and tofe. Dissolve the homemade miso and serve.

You roll the red beans past and wrap it in rice flour.Please decorate by topping with soybean flour.

Cooking with Keiko was a definite highlight of our vacation. We prepared a bento with karage, hijiki, tamagoyaki and onigiri. Keiko walked us through every step of the process and made the whole experience fun. We then had dango we made from tofu and rice flour with a soy sauce glaze for dessert. Finally Keiko showed us the proper way to prepare matcha. Keiko was a lovely hostess and picked us up from the local subway line, and even gave us some tips on what else to do during our time in Osaka, which we definitely did.
