  • Onigiri

    Onigiri

    Onigiri is a Japanese comfort food made from steamed rice formed into the typical triangular, ball, or cylinder shapes and usually wrapped with nori(dried seaweed). Stuffed with a a variety of fillings and flavors, these rice balls make an ideal quick snack and are a fun alternative to sandwitches for lunch.

  • Sukiyaki

    Sukiyaki

    Sukiyaki is completely different; the food is cooked in a sweet and salty soy sauce based broth and full of bold flavors straight from the pot. Besides the broth, the pot used to cook sukiyaki is also quite different from shabu shabu. Traditionally it is cooked in a cast iron pot while Shabu Shabu is cooked in a Japanese clay pot called donabe (土鍋), and the thinly sliced beef (but slightly thicker than shabu shabu meat) are seared first in the pot before adding the ingredients and broth. Despite having different flavor and cooking utensils, most Sukiyaki ingredients are similar to Shabu Shabu, such as leafy vegetables, tofu, shiitake mushrooms, and so on.

    Karaage

    Japanese fried chicken, karaage is made by marinating bite-size pieces of chicken in sake, soy sauce, ginger and garlic before coating them generously with potato starch. When fried, the starch turns into an ultra crispy shell encasing a flavorful juicy bite of chicken. Absolutely great with beer.

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

In Japanese cuisine, each dish is thoughtfully crafted with specific ingredients that hold particular significance. This tradition has been passed down through generations and continues to be a part of everyday meals.

Through our class, we aim to offer not just the experience of cooking Japanese food, but also the opportunity to understand Japanese food culture and appreciate its uniqueness from a new perspective.

In this class, we will make a traditional Japanese bento.

First, we will make onigiri, one of the iconic soul foods of Japan. While onigiri is readily available and delicious at any convenience store in Japan, homemade onigiri is even more special. We will also discuss the origin of the name "onigiri."

Next, we will prepare karaage, Japanese-style fried chicken. Many of you may have tried fried chicken before, but do you know the difference between fried chicken and karaage? Making delicious karaage is simple once you know a few key tips, and it’s a dish that always brings smiles.

We will also make tamagoyaki, a Japanese rolled omelette cooked in a special rectangular pan. This fluffy and delicate omelette can vary in flavor from household to household. In our class, we teach a savory dashi-flavored recipe without added sweetness.

Lastly, we will prepare kimpira, a dish often made with crunchy root vegetables like burdock, carrots, and lotus root. Kimpira might not be well-known outside of Japan, but it is an essential side dish in Japanese cuisine. It’s rich in nutrients, easy to make, and a great way to enjoy a variety of vegetables.

We hope that through this class, you will not only enhance your knowledge of food culture but also deepen your love for Japanese cuisine in a fun and engaging way.
