  • Sukiyaki

    Sukiyaki

Sukiyaki is completely different; the food is cooked in a sweet and salty soy sauce based broth and full of bold flavors straight from the pot. Besides the broth, the pot used to cook sukiyaki is also quite different from shabu shabu. Traditionally it is cooked in a cast iron pot while Shabu Shabu is cooked in a Japanese clay pot called donabe (土鍋), and the thinly sliced beef (but slightly thicker than shabu shabu meat) are seared first in the pot before adding the ingredients and broth. Despite having different flavor and cooking utensils, most Sukiyaki ingredients are similar to Shabu Shabu, such as leafy vegetables, tofu, shiitake mushrooms, and so on.

  • Rice

    Rice

Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

Reviews of Cooking Class

Matthew, United States of America

★★★★★

Toshi and Demi were excellent hosts and it was a very memorable moment for to be able to cook and enjoy Sukiyaki. Starting from the station it was a very quiet and enjoyable walk where we stopped and picked out some green tea with Toshi helping out. Once at their house, I was greeted by Demi and they both walked through history and culture around sukiyaki as well as their background too! During the cooking portion Demi did a excellent job demonstrating then letting me lead hands on which was a great experience. Every step was ensured that I was enjoying the experience and every ingredient was to my liking. It was quite busy so photos were not at the forefront of my thoughts, especially as I was solo traveling, but Toshi was taking plenty of photos which were shared later. They also generously compensated for a small allergy I had and quickly adapted the dessert menu with fantastic cakes from a local bakery. Lastly, it doesn't stop at cooking, we also shared stories, ambitions and overall great conversation. They speak excellent English so don't let translation issues scare you. Overall, I would love to go back and do one of their other courses in the future.

Response from Otaguro
Dear Matthew, Thank you so much for your wonderful and thoughtful review! It was such a pleasure welcoming you into our home. Although you mentioned that you don't cook very often, we were genuinely impressed by your natural talent! You arranged the sukiyaki ingredients with such beautiful height and balance. Your attention to detail was remarkable! Beyond the cooking experience, we truly enjoyed sharing stories about life, different cultures, and your hopes for the future. Despite the generation gap, we had so much to talk about that time simply flew by! Your determination and positive outlook on life were truly inspiring. We wish you every success as you pursue your dreams! We also hope your sister enjoyed the matcha souvenir from Kyoto! Most of all, we're delighted to have made a new friend in Texas. Whenever you return to Japan, please come and visit us. Our door is always open, and we'd love to see you again! Warmest wishes, Toshi & Demi Meguro Canvas
