Hi I'm Akiko from Tokushima, Japan.I spent time on an organic farm in Canada, where I experienced a lifestyle in harmony with nature. After returning to Japan, I was drawn to the delicious flavors and potential of plant-based cuisine. I taught myself how to cook with vegetables. I also earned a Level 1 Raw Vegan Food Chef certification in Bali. Recognizing the potential for a vegan lifestyle in Japan and driven by a desire to promote authentic shoujin
food (Buddhist cuisine) using Japanese ingredients and seasonings, I now teach friends from around the world through my cooking classes.I want to share authentic Japanese vegan sushi as well. I have planned and organized experiences in circular agriculture, campfire workshops, and cooking classes featuring plant-based ingredients. Currently based in Tokyo, I host cooking classes, catering events, cafe, and workshops.
