  • Nigiri Sushi

    Nigiri Sushi

Sushi (寿司, 鮨) is a Japanese dish of specially prepared vinegared rice (鮨飯 sushi-meshi), usually with some sugar and salt, combined with a variety of ingredients (ネタ neta), such as seafood (most commonly and often raw), vegetables, and occasionally tropical fruits. Styles of sushi and its presentation vary widely, but the key ingredient is "sushi rice", also referred to as shari (しゃり), or sumeshi (酢飯).

  • Miso Soup

    Miso Soup

Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

  • Green Tea

    Green Tea

The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

We had a very special sushi making class with our wonderful hosts, Nobu and Kaya. It is testament to the quality of their warm and friendly instruction that we actually made some pretty good sushi. Also, of cours the high quality of ingredients and tools. What a fun class to take part it. I would highly recommend it to anyone interested to learn how to make your very own nigiri. It’s also a really fantastic opportunity to spend some time with this gorgeous, hospitable and generous couple. We loved it. Five stars.

I recommend Nobu’s cooking class if you want to make high-quality sushi in an intimate, upscale sushi restaurant using the best traditional equipment (knife, omelet pan, rice stirring wooden bowl). I’m sure I can also make sushi at home using regular equipment, but now I know the ideal way to make it. Aside from learning from a professional chef, I had a lot of fun! The hosts are so friendly and make you feel very comfortable. When I told them I was here in Japan by myself and don’t know any friends in Japan, they said, “Now you have two friends in Japan.”

Response from Nobu
Thank you for participating in the sushi class. Dano had a good sense of sushi making, we talked about Japanese gardens, and we had a great time. What we were most happy about was the advice and cooperation in creating the classroom pages. I appreciate it very much. I am also impressed with the nice reviews. Dano is an important friend! I am looking forward to seeing you again in Japan.

Learning to make sushi with Nobu and Kaya was a fantastic experience. They speak limited English so I recommend being able to speak basic Japanese or be very patient and be willing to work with translation apps. I was the only student in my session and so we were able to take our time and also focus on the skills I wanted to learn. He invited me behind the sushi counter and walked me through the steps of how to prepare a fish from scratch and the proper technique for slicing sashimi. I recommend others to take this class, especially if you want to learn about some of the more detailed work in preparing sushi. I also took a homemade sushi class which taught a simpler technique of making sushi that is more beginner friendly, but paired with what I learned from Nobu I feel much more prepared to tackle sushi making at home.
