I this class, you actually make sushi vinegar from scratch and try making oshizushi - hand pressed sushi with local seasonal vegetables. This class takes place in my kitchen and living room so is very relaxed atmosphere. It is fun to decorate the sushi with various vegetables as you like. We also use our homemade miso to make miso soup.

Hello. My name is Akiko. My family and I live in the mountainous town called Keihoku in the north part of Kyoto. I like to cook with local seasonal vegetables. Varieties of organic vegetables are available in the local fermers markets and friends’ farms throughout the year. There are many edible mountain herbs around where we live. I also like to make my own seasonings such as miso and salted kouji. They are full of umami flavors which are perfect ingredients to make sauces and salad dressings etc. We can go find the ingredients either in the local farms or the farmers markets then decide to cook together with what’s available. It is so nice and relaxing to walk around the town as surrounded by beautiful nature. I can show you some beautiful and interesting spots in the town. It is worth the 80mins bus trip to escape from the hustle and bustle of the city!
