  • Nigiri Sushi

    Nigiri Sushi

Sushi (寿司, 鮨) is a Japanese dish of specially prepared vinegared rice (鮨飯 sushi-meshi), usually with some sugar and salt, combined with a variety of ingredients (ネタ neta), such as seafood (most commonly and often raw), vegetables, and occasionally tropical fruits. Styles of sushi and its presentation vary widely, but the key ingredient is "sushi rice", also referred to as shari (しゃり), or sumeshi (酢飯).

Cooking Class Information

Sushi is raw fish on sushi rice. Japanese people loves it from Edo period.
Originally, sushi was fish pickled for preservation. But in the Edo period, people in Edo started using fresh fish instead of pickled fish. They put raw fish slices or shellfish on top of small rice balls which were rolled by hand. This is called nigiri-zushi” typically known as “sushi” in Japan and all over the world.
You can make Nigiri-Zushi and Maki-Sushi om this class.

(What’s Nigiri-zushi?)
Each portion consists of a bite-sized serving of sushi rice and a topping.
Usually, the [neta] is some kind of seafood. Many kinds of fish are served, both red and white, shrimp and squid, all kinds of shellfish.... There are a tremendous variety of toppings.
The sugars in the vinegar form a coating around each grain of rice. This stops them from becoming sticky and seals in the flavor.
In the jargon of the sushi shop, the rice base for the sushi is known as the [shari].
