In this cooking class, we will make two popular Japanese home-style vegan dishes together: Vegan Yakisoba and Tofu Goma (Sesame) Salad.
We will begin with a short introduction and overview of the ingredients we will use. I will explain how Japanese home cooking is usually simple, seasonal, and balanced, and how many traditional dishes can be easily adapted into vegan versions.
First, we will cook Vegan Yakisoba, one of Japan’s most loved stir-fried noodle dishes often enjoyed at festivals, street food stalls, and home dinners. Yakisoba is usually made with noodles, vegetables, and a savory sauce, and we will recreate this using fresh vegetables like cabbage, carrots, onions, and mushrooms. You will learn how to prepare and cut the ingredients properly, how to stir-fry noodles without breaking them, and how to balance the Japanese-style sauce to get the authentic street food flavor. I will also share tips on how Japanese people achieve the “wok-style” taste using a simple home pan.
Next, we will prepare Tofu Goma Salad, a light and healthy Japanese home dish. This salad is made with soft tofu and fresh vegetables, combined with a creamy sesame (goma) dressing.
