1. Vegan Dal Tadka
A classic Indian comfort dish made with protein-rich yellow lentils, slow cooked until soft and creamy. It is finished with a traditional “tadka” (spice tempering) using cumin, garlic, ginger, and aromatic spices in hot oil. 2. Jeera Rice (Cumin Rice)

In this cooking class, we will make a comforting and authentic Indian home-style meal together: Vegan Dal Tadka and Jeera Rice, along with traditional side accompaniments.
We will begin with a short introduction and overview of the ingredients we will use. I will explain how Indian home cooking is deeply rooted in simplicity, nutrition, and bold flavors created using everyday spices, and how many traditional dishes are naturally vegan or can easily be adapted.
Vegan Dal Tadka
First, we will cook Vegan Dal Tadka, one of the most loved comfort foods in Indian households and dhaba-style restaurants.
This dish is made using protein-rich yellow lentils (dal), slow cooked until soft and creamy. You will learn how to prepare the lentils from scratch and understand how different spices such as cumin, turmeric, garlic, and ginger are used in Indian cooking.
A key highlight is the traditional “tadka” technique, where spices are tempered in hot oil to release deep aroma and flavor, then poured over the cooked dal. Even after living in Japan for more than 25 years, cooking remains one of the most important and enjoyable parts of my daily life. Since vegetarian food is not always easy to find in Japan, I learned to create a wide variety of delicious vegetarian and vegan dishes at home.
I enjoy cooking many cuisines including Indian, Japanese, Mexican, and fusion dishes. I especially love sharing authentic vegetarian Japanese home cooking and introducing guests to unique ingredients and food culture in Japan.
