About Okonomiyaki
Okonomiyaki is a popular Japanese savory pancake made with flour, eggs, shredded cabbage, and various ingredients such as pork, seafood, and cheese. The name "okonomiyaki" means "grilled as you like," reflecting its customizable nature. It is a beloved comfort food in Japan, often enjoyed with a special sweet-savory sauce, mayonnaise, dried bonito flakes, and seaweed powder.
In this lesson, we will make two styles of okonomiyaki: Osaka-style and Hiroshima-style.
* Osaka-style Okonomiyaki: This is the most common version, where all the ingredients are mixed into the batter before grilling. The result is a fluffy and flavorful pancake.
* Hiroshima-style Okonomiyaki: Unlike the Osaka style, this version layers the ingredients rather than mixing them. It also includes yakisoba noodles, giving it a unique texture and taste.

Today, we will be making two types of okonomiyaki: Osaka-style and Hiroshima-style.
Osaka-style okonomiyaki is made by mixing the ingredients—such as cabbage, flour, eggs, and seasonings—into a batter before grilling it on a hot plate. Slices of pork belly are placed on top of the batter before cooking, or in some recipes, crispy tempura bits are added between layers for extra texture. It is then topped with savory okonomiyaki sauce, mayonnaise, bonito flakes, and seaweed powder.
Hiroshima-style okonomiyaki, on the other hand, is made by layering the ingredients instead of mixing them. We first cook a thin pancake-like base, then add cabbage, bean sprouts, pork, noodles, and a fried egg in separate layers. Some variations also include tempura bits for extra crunch. It is finished with a delicious sauce, creating a unique and flavorful dish.
