  • Miso Soup

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

    Sake

    Japanese popular alcoholic drink must be Sake, or called Nihonshu, made from fermented rice. The foundation of good sake is quality rice, clean water, koji mold and yeast. Premium sake differentiates itself in quality of ingredients and production process, so that flavors ranges light and crisp to richer, fruity notes.

    Green Tea

    The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

Cooking Class Information

As soon as you arrive at the kitchen, a good Hokkaido natural water bottle will be served.
In this class, we will make sushi rice and soup stock from scatch. You can use your imagination to make cute Temari Sushi using green leaves and edible flowers. Rolling eggs is fun and you can make it sweet or unsweet or add cheese if you want to! 3 traditional dishes are all vegi to balance up your meal. Ingredients are all organic. Dessert is ZENZAI which is sweet red bean with mochi and a good green tea. As for option, RAW sake is in my fridge and will be served ¥500 per glass.

Hi. My name is Shirley Mayumi Maekawa. I was born in the states and raised in Japan. I also lived in Taipei, Singapore for my husband's work and those experience has lead me to open a kitchen for fogreiners who are interested in Japanese cooking. Luckly, I'm graduated from a culinary school in Japan 29years ago and for now, I'm a fermented food reseacher, Sake navigator, Cheese navigator, Food hygiene maneger and owner of Shirley's Cooking&Workshops. My new kitchen is located at a residential area in Tokyo so you can enjoy some street walk and supermarket tour after your class.
