・Okonomi-yaki
Okonomi-yaki is pancake with cabbage and pork. In Osaka, we often eat it for lunch. I will teach you delicious sauce.
In this cooking class, you'll learn how to make okonomiyaki, one of the most popular local dishes from Osaka!
The batter is made from flour, eggs, and dashi (Japanese soup stock), and mixed with shredded cabbage. Thinly sliced pork is placed on top before it's cooked on a hot plate.
Once it's ready, it's topped with a sweet and savory sauce and sprinkled with katsuobushi — thin, smoky bonito flakes
You’ll also learn about dashi and katsuobushi, and even get to try shaving your own bonito flakes using a traditional Japanese tool. It’s a fun and hands-on experience you won’t forget!
Hi! I'm Yuka Isobe. I am a professor at a national university in Japan. I have worked at the Faculty of Education for more than 30 years. My major is Food science and Dietary education. I started to hold the cooking class since 2018, because I wanted to show tourists not only how to eat Japanese food in restaurants, but also how to cook it, the ingredients used, and the food culture.
