Okonomiyaki is an Osaka savory pancake that typically contains shredded cabbage, flour and a variety of toppings. It's often served with a sweet and savory sauce, mayonnaise.
This time we use rice flour to create s gluten-free and light texture. Sweet and savory sauce, mayonnaise are for vegan.

Miso soup is a traditional Japanese soup made from soybean paste, called miso, and dashi, a broth made from dried mushroom and seaweed. Seasonal vegetables such as tofu, seaweed, It's a staple dish in Japanese cuisine and is often served as a side dish with other meals.

    Okonomiyaki is a Japanese savory pancake, made with flour, eggs, shredded cabbage, meat and toppings as you like. This variability is reflected in the dish's name: "okonomi" literally means "to one's liking". You can eat it everywhere in Japan, but especially Okonomiyaki made Hiroshima style and Osaka style are the most famous.

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

Cooking Class Information

Okonomiyaki is made by mixing chopped cabbage, soybean products, etc. with rice flour and frying it in a frying pan. It is Osaka style to finish with sauce and mayonnaise, but this time we will eat it lightly with Kujo green onions and ponzu sauce in Kyoto style.
We have arranged it with ingredients that are easy to make even when you return to your home country. We use high quality organically grown rice flour.

Miso soup is made by simmering dashi stock and ingredients, and finally adding miso to make it your favorite flavor. Rice koji is used for miso, and it is one of the typical fermented foods in Japan.
