If you don't like umeboshi, you can substitute it with cheese or vegetables.・Dashi-rolled tamagoyaki Baked in a Kansai-specific tamagoyaki frying pan with a dashi stock made from bonito flakes and kelp. Dashi-maki tamagoyaki, a Kyoto soul food, is juicy, soft and fun to make.・Kinpira burdock Kinpira burdock is a Japanese home-cooked dish. It is rich in fiber and regulates the intestinal environment. This is a side dish made by washing and slicing burdock root and stir-frying it with shredded carrots and seasonings unique to Japan. Komatsuna Ohitashi and Komatsuna are rich in iron, and Japanese people actively cook and eat them. Komatsuna, which has a bitter taste, is a simple and healthy side dish that is boiled for a nice color and served with dashi soup. Plum rice - Rice from Kyoto and traditional umeboshi rice are placed in a cherry blossom-shaped cypress mold. If you don't like umeboshi, you can leave out the umeboshi. Aosa Nori Miso Soup/Aosa Nori Miso Soup is made with dried bonito flakes and kelp, and is finished with the instructor's homemade miso. In this class, you will make dashi soup from scratch and beautifully arrange meals that Japanese people usually eat into Shokado bento boxes. We will prepare all the dishes by hand and enjoy them slowly with your favorite alcohol. We try to keep it healthy by reducing sugar and salt as much as possible. This is a classroom that will satisfy you.

★★★★★I did the Bento Box class with my adult daughter on Christmas day. Making Bento Boxes with Shirley was a fantastic experience! Even though it was Christmas….jingle bells we’re playing everywhere in Japan….. we never felt rushed. When you enter her business it’s like a home, but she doesn’t live there. She uses the place for her culinary kitchen for other business, a rice ball take away restaurant. Her business feels like home, casual and non-threatening. You don’t feel like you’re in a 90 minute cooking student mill. They don’t want to know you, just follow the instructions. Shirley is a culinary chef, which she demonstrates in simple casual demeanor. She does that while engaging in fun conversations about cooking and life! She wants to know about your life and and is open about her culinary career. She is non-arrogant and had us taste the food as it was cooked. And ask if we would like it more salty or sweeter. That is a good cook who wants to please her guests! My daughter does not speak Japanese, I speak a limited amount. Shirley speaks English as she lived in California when she was younger. The bento box was beautiful and we learned new easy to make simple but beautiful recipes. We ate our meal at her table that had over 100 old wood. Wonderful story how she got the table. She gave me green tea as requested and gave my daughter, a bottle of delicious sake! When we left, my daughter and I felt like she became a friend, I’m addition, I left my glasses at her kitchen. She contacted my daughter. We didn’t have a car. She asked what hotel we are located. She and her husband drove dropped off my mom’s glasses at hotel reception! She also emailed her recipes. Shirley has a beautiful soul and a great teacher for cooking Japanese food. She is the kind of chef who loves food and knows that food is love which you share with those you love. I highly recommend her!
