  • Tempura

    Tempura

Tempura (天ぷら) is a classical Portuguese dish brought to and popularized by Japan, consisting of seafood or vegetables that have been battered and deep fried. Tempura is a typical home-style cooking in Japan. It is often referred to as a representative dish to Japan. Although there are various theories, it is said that Tokugawa Ieyasu, the general of the Edo period, liked tempura so much that he allegedly died from eating too much.

  • Okonomiyaki

    Okonomiyaki

Okonomiyaki is a Japanese savory pancake, made with flour, eggs, shredded cabbage, meat and toppings as you like. This variability is reflected in the dish's name: "okonomi" literally means "to one's liking". You can eat it everywhere in Japan, but especially Okonomiyaki made Hiroshima style and Osaka style are the most famous.

  • Onigiri

    Onigiri

Onigiri is a Japanese comfort food made from steamed rice formed into the typical triangular, ball, or cylinder shapes and usually wrapped with nori(dried seaweed). Stuffed with a a variety of fillings and flavors, these rice balls make an ideal quick snack and are a fun alternative to sandwitches for lunch.

  • Karaage

    Karaage

Japanese fried chicken, karaage is made by marinating bite-size pieces of chicken in sake, soy sauce, ginger and garlic before coating them generously with potato starch. When fried, the starch turns into an ultra crispy shell encasing a flavorful juicy bite of chicken. Absolutely great with beer.

  • Rice

    Rice

Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

  • Miso Soup

    Miso Soup

Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

  • Sake

    Sake

Japanese popular alcoholic drink must be Sake, or called Nihonshu, made from fermented rice. The foundation of good sake is quality rice, clean water, koji mold and yeast. Premium sake differentiates itself in quality of ingredients and production process, so that flavors ranges light and crisp to richer, fruity notes.

  • Green Tea

    Green Tea

The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

Meet Your Instructor: Junko

Hello! My name is Junko. I'm a native Japanese local, a graduate of Sophia University, and a former high school teacher. In my free time, I love swimming, canoeing, reading, and traveling.
My passion for traditional Japanese cuisine runs deep, having prepared these dishes throughout most of my life. I am dedicated to creating high-quality, additive-free meals, always with a focus on healthy cooking practices.
Though born and raised in Tokyo, I've also had the enriching opportunity to live abroad in places like Singapore, Hong Kong, and the United States for a total of five years. These experiences have allowed me to pick up English, which I truly enjoy speaking whenever I can!
I am a very sociable person and genuinely enjoy connecting with people from diverse backgrounds. Sharing my love for Japanese cuisine and culture is a true passion, and I eagerly look forward to embarking on this culinary journey with you!

Junko is an awesome and experienced cook. My son and I had enjoyed the learning experience very much. We now know the sercrets of cooking tonkatsu. We were also pleasantly surprised that Junko stayed in Singapore for a couple of years and she still likes the hawker centre food in Singapore. She was in Singapore recently.

Hi, Jason, thank you for joining my class yesterday. I have loved Singapore ever since I was treated with kindness by a Singaporean on my first visit there, and of course, I love local foods in hawker. Singapore pork is famous among local Japanese for its delicious taste. Please try making it for your family!

Merci beaucoup Junko!

Our family loved learning to cook Japanese food with Junko. We now know what to buy to make authentic Japanese dishes and how to prepare them. Junko’s explanations were clear and easy to follow. It was also lovely to visit a beautiful person in her own suburban home. We enjoyed an easy walk from the station and were interested to walk through the suburban area and to pass a large communal vegetable plot on the way. This will certainly be a highlight of our visit to Japan.
