We're diving into the exciting challenge of making tamagoyaki (Japanese rolled omelette)! Then, we'll prepare the golden dashi stock and make miso soup. Tamagoyaki requires speed. In Japan, there's a long and narrow frying pan specifically for making tamagoyaki. We'll use that to cook the omelette. Then, I'll teach you how to make dashi stock using kombu (kelp) and bonito flakes. You'll also get to taste three types of miso: white miso, Shinshu miso, and red miso, and choose your favorite.
