Cooking Class Information

・Sushi
Generally, sushi is a Japanese dish that combines sushi rice (vinegared rice) and toppings (mainly seafood). In addition to fresh seafood, it is not uncommon for meat, vegetables, eggs, and other ingredients to be used as toppings. There are many different types of sushi. Sushi is one of the traditional Japanese food cultures and a dish loved all over the world. Its charm is that it is imbued with Japanese flavor and craftsmanship. Japanese aesthetic sense and delicacy are present in each and every piece that the craftsman painstakingly makes.

・Nigirizushi
Nigirizushi refers to sushi rice with toppings placed on it and lightly pressed. It is characterized by a long, thin shape of rice with toppings slightly overlapping. Nigiri is served warm so that the rice and toppings crumble delicately on the tongue and the flavor can be fully enjoyed. Eel and conger eel are rich in vitamin A, which protects the health of the eyes and skin, yellowtail and bonito are rich in vitamin D, which helps with calcium absorption, and tuna is rich in vitamin B6, which supports the synthesis and decomposition of protein. Pay attention to the rice that supports the sushi toppings. The carbohydrates in rice are a source of energy for maintaining life and physical activity.

・Makizushi
Makizushi is a type of sushi. It is made by wrapping sushi rice around a core of ingredients in seaweed, thin omelet, or a sheet of grated kelp. It is also called "Nori Maki" and is made by wrapping vinegared rice and ingredients in a sheet of seaweed like a roll cake. The difference between Makizushi and regular nigiri sushi is that you can enjoy multiple ingredients at once. Makizushi is also called thin rolls or thick rolls depending on the thickness.

Gunkanzushi is a type of sushi made by rolling the sides of vinegared rice into a small, elongated ball with nori seaweed and placing ingredients on top. Ingredients such as salmon roe and sea urchin are placed on top, as they would spill out if placed on top of the vinegared rice. It is called gunkanmaki because its shape resembles a gunkan (battleship).

・Green tea
Green tea is a non-fermented tea made from raw tea leaves without fermenting them. It is a collective name for various types of tea, including sencha, gyokuro, bancha, matcha, and roasted tea. Among them, sencha is the representative green tea that modern Japanese people drink on a daily basis. The reason people drink green tea at sushi restaurants is because it is sterilized by boiling, grilling, or applying heat in cooking, but raw foods contain germs. For this reason, it is said that people have been drinking "green tea" which has a high antibacterial effect. This is because it is believed that the catechins contained in green tea have a high antibacterial effect and kill the germs in raw foods.

・Miso soup
Miso soup is a soup made by combining miso with dashi stock and adding ingredients such as tofu and wakame seaweed. In Japan, the idea of "ichiju-ichisai" (one side dish excluding the staple food and one bowl of soup) is an important component of a meal, and miso soup is as essential as rice in that it is the only soup that makes up a meal. Miso soup is effective in preventing lifestyle-related diseases. Soybeans, the raw material for miso, contain lecithin, which has the effect of lowering cholesterol. Representative foods that contain a lot of lecithin include chicken eggs and chicken liver, but soybeans also contain a lot of it. In addition, the saponin contained in soybeans has the effect of suppressing blood sugar rise.
