Vegan okonomiyaki with cabbage, spring onions, and yam. No animal products are used. Sauce and soy milk mayonnaise are made together.
〇Miso soup
Vegan miso soup made with homemade miso. The stock is carefully made with kelp and dried shiitake mushrooms. The ingredients include tofu, wakame seaweed, and mushrooms, making it very satisfying with plenty of ingredients.
〇Japanese tea We will show you how to make homemade green tea.
〇Seasonal sweets Vegan sweets (matcha cake, warabi mochi, etc.)

  • Okonomiyaki

    Okonomiyaki

    Okonomiyaki is a Japanese savory pancake, made with flour, eggs, shredded cabbage, meat and toppings as you like. This variability is reflected in the dish's name: "okonomi" literally means "to one's liking". You can eat it everywhere in Japan, but especially Okonomiyaki made Hiroshima style and Osaka style are the most famous.

  • Miso Soup

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

  • Green Tea

    Green Tea

    The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

Cooking Class Information

In this cooking class, we will make it together.
〇 Okonomiyaki
Cut cabbage, green onions and other vegetables. Mix the ingredients, let it sit for a while, and bake in a frying pan.
Then make soy milk mayonnaise. Spread the sauce and mayonnaise on your own and eat it.

〇 Miso soup
Learn how to make dashi stock from kelp and dried shiitake mushrooms.
We will use the miso that I made.

〇 Green tea
I will explain how to make tea. I will explain the amount of tea leaves, the temperature of the water, etc., and let's brew tea together. I will serve you Japanese sweets that I made at that time.

Nice to meet you! I'm Makiyo.
I run a vegan cooking class at my home near Osaka Castle.
I've been studying French pastries as a job for 25 years.
When I lived in France, I realized how wonderful the Japanese food culture was, and now I'm interested in traditional Japanese koji and am studying fermented foods in depth.
Also, recently, when a vegetarian friend came to Osaka, she had a hard time choosing a restaurant. She realized that there are still fewer vegan restaurants in Osaka than in Tokyo.
That's why I'm running a cooking class that specializes in vegans. It's not as formal as a classroom, so we offer Japanese home cooking and sweets that even people with food restrictions can enjoy, as if they were coming to visit your home.
