During the lesson, we will make four kinds of sushi:

*Inari sushi
Sushi rice in a fried tofu pocket

*Rolled sushi
Cucumber rolled in seaweed

*Battleship sushi
Sushi rice wrapped in seaweed with a delicious topping

*Hand-pressed sushi
The most popular style of sushi, made with various toppings

Guests are then treated to a delicious meal of the sushi that they made themselves. The meal includes soup, a beverage (Japanese sake or a soft drink), dessert, and green tea.

  • Inari Sushi

    Inari Sushi

    Inarizushi is stuffed in seasoned Aburaage tofu pouch. Inarizushi is technically sushi, but it is not something you order at nice sushi restaurants. It is easily found at supermarket delis, but, as you know, home made is the best. Inarisushi is a very casual food and a perfect lunch for picnics because it’s best eaten right from your hands.

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

  • Sake

    Sake

    Japanese popular alcoholic drink must be Sake, or called Nihonshu, made from fermented rice. The foundation of good sake is quality rice, clean water, koji mold and yeast. Premium sake differentiates itself in quality of ingredients and production process, so that flavors ranges light and crisp to richer, fruity notes.

    Green Tea

    The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

Cooking Class Information

In this lesson, you will learn about "Edomae" sushi, which is one of the most popular styles of sushi, originating in Tokyo.
I start by showing you how we clean a fish and prepare it for sushi.
We make vinegar rice using a special red vinegar.
You will learn to make four different kinds of sushi - Inari (tofu pockets), Battleship, Rolled sushi, and hand-pressed sushi. We will take you through each step so that you can make your sushi with confidence.
After the lesson, you can enjoy eating a delicious lunch or dinner of the sushi that you made yourself, along with soup, a beverage, and dessert.

I am Akemi Castellano, the owner/sushi chef at AKEMI’s SUSHiKiTCHEN.
I was born and raised in Tokyo.

I started my working career in an office affiliated with the Ministry of Health, Labour and Welfare, where I had the opportunity to meet many foreign visitors.

Many of them said, “Japanese food is healthy and delicious,” and “I’d like to try making this at home.” After my children got a little older, I decided to open a sushi cooking class in my own home. We make four kinds of sushi, starting from the vinegar rice.

I encourage you to try this lesson, where you will feel like you are visiting a friend’s house.
Eating delicious sushi that you make yourself, you will feel refreshed in both body and mind.
