・Shojin Sushi (vegetarian sushi, often made following Buddhist dietary principles)

・Grilled Eggplant "Kabayaki" Style (eggplant prepared in a sweet soy-based glaze, similar to how eel is traditionally cooked)

・Mizu Yokan (a chilled, smooth red bean jelly)

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

Cooking Class Information

Japan has a traditional cuisine called Shojin Ryori. Shojin Ryori is a vegetarian cuisine based on Buddhist traditions in Japan. It does not use meat or fish, focusing instead on vegetables, legumes, and seaweed, creating a healthy and well-balanced meal. The flavors are delicate, highlighting the natural taste of the ingredients, and the dishes are beautifully presented, offering a meal that nourishes both the body and mind.

In this cooking class, we will create Japanese dishes inspired by the philosophy of Shojin Ryori. We will chop seasonal vegetables and carefully explore the flavors and aromas of traditional Japanese seasonings such as soy sauce, miso, and vinegar while preparing each dish.

During the meal, you will also have the opportunity to enjoy organic Japanese sake and fragrant Japanese tea, making the experience even more special.

Join me in a modernly renovated traditional Japanese home-turned-cooking studio,
where we can enjoy the art of creative Japanese cuisine together.

I am the host of gokan Cooking Class, a home-style cooking workshop.
gokan (五感) = The Five Senses When cooking, the most important thing is to engage all five senses.

Until now, I have taught home-cooked meals to Japanese students.
But after seeing so many foreigners coming to Tokyo,I started feeling passionate about sharing Japanese food culture with international visitors.

Japanese cuisine is more than just food; it reflects our culture, history, and heart. While there are many culinary traditions around the world, Washoku (Japanese cuisine) has a unique beauty and delicate refinement, embracing a philosophy that honors the true flavors of each ingredient. I passionately wish to share the depth and richness of Washoku with foreigners, helping them experience its wonders firsthand.
And, at the core of Washoku lies the spirit of gratitude behind the phrases “Itadakimasu” (said before meals) and “Gochisousama” (said after eating). By learning about Japan’s traditional food culture, cooking, and tasting the dishes, I want my guests to truly grasp this deeper meaning. To make this experience fun and accessible to everyone, I am excited to open a cooking class tailored for international visitors.

If my guests can feel the essence of Japan—its environment and people—through food, that would be the greatest joy. Sharing the charm of Washoku, I believe, goes beyond just teaching recipes; it conveys the heart and soul of Japan.
