・SUSHI (Nigiri)
Nigiri sushi is the soul food of Japan.
Generally, people don't make it at home and go to Sushi restaurants to eat it.
I learned how to make Shari (sushi rice) and how to make sushi from a sushi chef. I will be showing you how to make them through first-hand experience.

All ingredients are of high quality and are sourced from the Tsukiji market.

・DASHIMAKI TAMAGO (Dashi Rolled Egg)
This is a traditional Japanese egg dish made carefully layer by layer to maximize the softness and fluffiness of the texture.
Dashimaki tamago incorporates broth made from kelp to enhance its umami.


・NIMONO OF THE DAY
Nimono is classic Japanese comfort food.
Dishes are cooked for a long time over low heat.
I simmer it for about three days to make it.
I prepare this dish in advance.
You can get a taste of different Japanese flavors during your stay.

・JAPANESE SAKE
We have a perfect sake to go with your sushi.
For guests who don't enjoy Japanese Sake,we are happy to offer white wine as well.

For guests who don't drink alcohol, we are happy to offer Japanese tea.

    Nigiri Sushi

    Sushi (寿司, 鮨) is a Japanese dish of specially prepared vinegared rice (鮨飯 sushi-meshi), usually with some sugar and salt, combined with a variety of ingredients (ネタ neta), such as seafood (most commonly and often raw), vegetables, and occasionally tropical fruits. Styles of sushi and its presentation vary widely, but the key ingredient is "sushi rice", also referred to as shari (しゃり), or sumeshi (酢飯).

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

    Japanese popular alcoholic drink must be Sake, or called Nihonshu, made from fermented rice. The foundation of good sake is quality rice, clean water, koji mold and yeast. Premium sake differentiates itself in quality of ingredients and production process, so that flavors ranges light and crisp to richer, fruity notes.

Cooking Class Information

The main purpose of this cooking class is making "Sushi".

First, we make the ”Shari”(sushi rice) together.
You'll be surprised to learn that ”Shari” is not just plain rice.

After that, we slice block of some kind of fish and grate fresh wasabi.

You can experience wasabi in its original,natural form.

At the end, we shape the sushi with our hands.
I think it will be a very special experience for you.

I prepare sushi using techniques I learned from a professional sushi chef, and I will share these techniques with you.

You can also make "Dashimaki Tamago (Dashi Rolled Egg)".

First, you can see the original state of the broth.

After that, we mix eggs, broth, and my carefully selected seasonings.

At the end, we roll the egg mixture in a frying pan.
This process is very difficult, so you can just watch. Of course, you can try if you want.

I think you'll enjoy walking around my neighborhood before or after our AirKitchen session.
