    Tempura

    Tempura (天ぷら) is a classical Portuguese dish brought to and popularized by Japan, consisting of seafood or vegetables that have been battered and deep fried. Tempura is a typical home-style cooking in Japan. It is often referred to as a representative dish to Japan. Although there are various theories, it is said that Tokugawa Ieyasu, the general of the Edo period, liked tempura so much that he allegedly died from eating too much.

  • Udon

    Udon

    Udon (うどん) is a type of thick wheat flour noodle. It is similar to Italian pasta, but much thicker. It has been eaten all over Japan as an easy-to-eat popular meal, and a substitute meal for rice dishes. Udon is often served hot as a noodle soup in its simplest form, as "kake udon", in a mildly flavoured broth called kakejiru, which is made of dashi, soy sauce, and mirin. The flavor of broth and topping vary from region to region.

    Sushi (寿司, 鮨) is a Japanese dish of specially prepared vinegared rice (鮨飯 sushi-meshi), usually with some sugar and salt, combined with a variety of ingredients (ネタ neta), such as seafood (most commonly and often raw), vegetables, and occasionally tropical fruits. Styles of sushi and its presentation vary widely, but the key ingredient is "sushi rice", also referred to as shari (しゃり), or sumeshi (酢飯).

    Tea Ceremony

    The Japanese tea ceremony is a centuries-old tradition closely tied to Zen Buddhist principles, and a popular way to experience Japanese culture. There are several variations on this ritual. At its base, powdered green tea (matcha) is prepared and served in accordance with strict rules. Oftentimes, wagashi (Japanese sweets) is served alongside the bitter green tea.

Cooking Class Information

In this class, you will be able to enjoy Handmade Udon from raw materials which is traditional noodles in Japan. Everybody steps on the material. It’s very fun. Seasonal vegetable Tempura matches Udon very well. In addition to these menu, let’s try Wagyu Aburi Sushi (Sushi with Japanese baked beef )/Nigiri Sushi/Maki Sushi). Especially,Wagyu Aburi Sushi is very rare Sushi. For your information, all materials are from Japan. All drinks such as Japanese sake, beer and soft drinks so on are free of charge. After the meal , you can enjoy Tea Ceremony.At the end of class, my wife Keiko writes guest's name in calligraphy on colored paper with the photo of memories as a souvenir.

At 11:00 am (or 5:00 pm), gather at the Central Exit of JR Omori Station. Please take JR Keihin Tohoku Line to JR Omori Station. Look for Taka who has a bag with the logo of "homecoming TAKA". 8 minutes walk to his home. Along the way, pass by the side of the shrine and walk in the quiet residential area.

Then, cook Sushi and Tempra together as the main menu for lunch(or dinner). Wagyu Aburi Sushi is especially rare and delicious. In addition, Keiko takes on some Japanese small dishes.

Team Taka was the best! Taka and Keiko were so kind. Even on the walk to the house, Taka explained a lot about the history of his neighborhood. When we got to the house, it was so clean and beautifully decorated. Keiko is truly a chef! She was even able to accommodate our dietary restrictions. They welcomed us into their home, taught us a lot about Japanese culture and cooking and were so patient with my kids (age 9 and 11). Taka and Keiko are a lovely couple and wonderful ambassadors for their country. They are very warm and genuine people and we enjoyed every minute spent with them. Their class surpassed all our expectations. They had very clear instructions and prepared all the ingredients ahead of time, so that the class ran very smoothly. We now can make tempura, udon noodles and sushi from scratch better than we can buy from our neighborhood restaurants! If you are travelling with children, I especially recommend this class because my kids had so much fun and were completely engaged in the experience (whereas if we took them to see museums or shopping they would have been bored stiff). We had an enjoyable time with Taka-san & Keiko-san. Taka-san met us at Omori station and our first brief stop was a Shinto shrine in their neighborhood before continuing with a leisurely stroll to his place which is situated in a nice residential estate. The first item that we made was the udon whereby we took turns to "knead" it before cutting it up into small strips. The sushi rice was pre-made and we shaped the nigiri sushi and also learned how to roll the maki sushi using the bamboo mat. The last item was the tempura whereby we were showed how to make the batter before deep frying them. The hosts were generous with the drinks and we paired the sumptuous food with Japanese beer and some sake. Keiko-san gifted us with the origami that she hand made and also wrote our names down in calligraphy. This is not an in-depth cooking class per se but rather giving us a glimpse into Japanese cuisine and culture which we much appreciate. Our session lasted 3.5 hours and I would like to thank Taka-san and Keiko-san for hosting us a to a fun-filled session.

The tempuras were excellent. I’m soon having a Japanese diner party at my place and I can’t wait to cook those recipes, I hope I’ll do well :) I also tasted Japanese drinks ! After having diner, Keiko drew my name in Japanese calligraphy on a beautiful board with golden edges, which I’m now keeping in my appartment as a souvenir. Taka and Keiko also gave me some gifts before leaving. Thank you for being so welcoming and generous and helping me out eating with sticks (I’m doing better now but not an expert yet !), you made me feel like home. I’ll definitely come again when I get the chance to be back in Tokyo. In the meanwhile, take care, and I hope we meet again soon.

This cooking experience with Taka and Keiko was the highlight of my visit to Tokyo! It was a wonderful opportunity to not only learn how to prepare a home-cooked Japanese meal (including souvenirs to help re-live the experience at home) but also enjoy insightful cultural conversations in a beautiful home with welcoming hosts. Taka picked me up from the station and made me feel like a part of the family for the entire evening. I particularly enjoyed the enthusiasm with which he shared his experiences living in various cities within Japan and around the world. Keiko was an incredibly patient executive-chef and kindly answered all of my questions while we prepared the various courses of the meal. After sitting down to eat, they happily explained a number of Japanese customs and were excited to learn about my own cultural traditions. I’m happy to have had such a personalized dinner with such a warm family and look forward to the opportunity to cross paths again!
