Here is the ingredients and utensils list for 4 servings:
Sushi Rice:
300g rice for sushi
In advance of the class, please measure 300g rice (as accurately as you can). The rice should be washed using cold running water and then drained. Repeat this process 10 times. After that, soak the rice in cold water for 30 minutes before our class. Use just enough to cover the rice.
310ml still water
3 tbsp vinegar (rice vinegar is ideal, but any white vinegar works)
2 ½ tbsp brown sugar
1 ½ tsp salt
Sushi ingredients:
3-4 dried shitake mushrooms:
In advance of the class, the dried shitake mushrooms should be soaked in 100ml cold water for 8 hours. It gives a lot of umami to sushi so please don’t skip this step if possible.
Please keep the water in which the shitake have been soaked. We will use this too!
One medium carrot (around 50g or so). We will use half of this to decorate the sushi. Please choose a carrot of a size matching your cookie cutters.
1 ½ tbsp brown sugar
1 ½ tbsp cooking sake
1 ½ tbsp soy sauce
1 avocado
40g-60g smoked salmon
30g white sesame
7-8 shiso leaves or basil leaves
Sengiri Egg Crepe:
2 eggs
1 tsp cooking sake
1 pinch of brown sugar
1 pinch of salt
20-30g pickled beets (beetroot) ※ These are optional. If you would like to make pink-colored rice, get some!
Utensils:
1 Sushi-Oke (wooden bowl for sushi rice). The wooden bowl maintains the texture of the sushi rice. A wooden mixing bowl or salad bowl will work. If not, a ceramic or stainless steel bowl with work.
Some small cookie-cutter shapes. (e,g, flowers, stars, hearts) for making shapes from the carrot
1 casserole pan for boiling rice
1 wooden spatula for mixing rice
1 paper fan (for cooling down hot vinegar rice in traditional fashion!)
1 saucepan for boiling the carrots and the dried shitake mushrooms
1 frying pan for making the egg crepe
1 small bowl
1 whisk

Following the success of the first Okonomiyaki session on 12 July,We decided to have chirashi sushi session
on 6 September.
Chirashi Sushi is mostly one of home party menus in the special occasions such as birthday,girl’s festival day(3 March.) even Christmas day in Japan since when I was a kid or longer years ago
It may be the most easiest type, but presentable sushi, the vinegar sushi rice just scattered (=Chirashi) with ingredients .However the vinegar sushi rice is key.

Nahoko will teach you how to make not only delicious Okonomiyaki Oosaka-style but also Okonomiyaki sauce and red pickled ginger, using ingredients you can get easily in your country. Mac will talk about Japanese food culture and share many stories about the history of and life in Japan.
