Vegan Soy Sauce Ramen & Gyoza with Matcha & Waggish
Vegan ramen broth — soy sauce — plus gyoza filled with the same vegetables used to build your ramen broth — nothing wasted, everything connected. Then finish with hand-whisked matcha and homemade wagashi.
Shoyu Ramen (Soy Sauce Broth Ramen)
Make vegetable soup.
Make tomato and mushroom soup.
Make soy sauce soup using the vegetable soup, tomato and mushroom soup, and tare (seasoning).
Make vegetable toppings.
Boil the vegan noodles.
Place in a bowl.
Vegan ramen is complete.
Vegan Gyoza (Pan-fried Dumplings)
Finely chop the vegetables.
Add soy sauce and other seasonings.
Wrap the filling in dumpling wrappers.
Cook the dumplings.
Make a dipping sauce and your vegan dumplings are complete!

Preparation
Cool the water to the right temperature
Warm the bowl and soften the whisk
Wipe the bowl completely dry

Blend gently at first

Smooth the foam
Remove the whisk
Warabi Mochi (Traditional Japanese Jelly Sweet)
Heat the ingredients in a pot to make warabi mochi.
Cut the warabi mochi into bite-sized pieces.
Place in a bowl and sprinkle with kinako (roasted soybean flour) and kuromitsu (brown sugar syrup).
