Experience the authentic taste of Japan’s most iconic noodle dish, 100% plant-based! We will craft an umami-rich, deeply flavorful broth using a special blend of soy sauce and vegetable dashi, entirely without animal products. You'll learn the secret to making a satisfying and classic bowl of ramen that warms your soul.

Vegan Maki Sushi (Rolled Sushi) with Savory Miso Tofu
Discover a unique and delicious twist on classic rolled sushi. The star ingredient is our homemade "vegan meat-miso" made from firm tofu and Hatcho Miso (a traditional, rich dark miso). Rolled together with fresh, crunchy vegetables, it creates a perfect balance of savory, sweet, and umami flavors in every bite.

Vegan Temaki Sushi (Hand-Rolled Sushi)
Get hands-on and creative with Temaki sushi! In this interactive and fun style of sushi making, you will wrap your own cone-shaped sushi using crisp nori seaweed, seasoned sushi rice, and a colorful variety of fresh, seasonal vegetables. It’s a playful and delicious way to enjoy healthy Japanese cuisine.

A popular traditional, naturally vegan dessert. It is a chilled, delightfully chewy, jelly-like confection, typically enjoyed with a dusting of sweet roasted soybean flour (Kinako).

    Ramen is a noodle soup dish and perhaps one of the most popular Japanese dishes. There are many flavours of ramen, such as Shoyu (soy sauce) ramen, Miso ramen, Tonkotsu (pork bone) ramen and so on. Common toppings are Chashu (braised pork), Negi (green onion) and Nori (dried seaweed).

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

    Green Tea

    The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

Cooking Class Information

Shoyu Ramen (Soy Sauce Broth Ramen)
Make vegetable soup.
Make tomato and mushroom soup.
Make soy sauce soup using the vegetable soup, tomato and mushroom soup, and tare (seasoning).
Make vegetable toppings.
Boil the vegan noodles.
Place in a bowl.
Vegan ramen is complete.

Vegan Maki Sushi (Rolled Sushi) with Savory Miso Tofu
Cook the rice to make sushi rice.
Spread the sushi rice onto the nori seaweed.
Add the ingredients.
Roll it up using a bamboo rolling mat.
Let it sit for a while to allow the flavors to meld.
Cut and serve.

Vegan Temaki Sushi (Hand-Rolled Sushi)
Cook the rice to make sushi rice.
Cut the nori seaweed.
Place the sushi rice and vegetables on top of the nori.
Roll it up by hand and it's done!

Matcha (Premium Green Tea)
Preparation
Cool the water to the right temperature
Warm the bowl and soften the whisk
Wipe the bowl completely dry
Whisking
Pour the water
Blend gently at first
Whisk briskly using your wrist
Smooth the foam
Remove the whisk

Warabi Mochi (Traditional Japanese Jelly Sweet)
Heat the ingredients in a pot to make warabi mochi.
Cut the warabi mochi into bite-sized pieces.
Place in a bowl and sprinkle with kinako (roasted soybean flour) and kuromitsu (brown sugar syrup).

In our workshops, you will learn the traditional home-style cooking that Japanese people eat on a daily basis in the natural setting of Arashiyama, Kyoto. We use fresh local vegetables and provide recipes that are easy to reproduce. A husband with 25 years of experience as a chef and a wife who loves nature and vegetables will support you carefully and with an emphasis on eco-friendly and sustainable living.
