*Temari zushi is ball-shaped sushi with a topping of fresh seafood, or vegetables.
*Nigiri zushi is hand-formed sushi with a topping of seafood, etc.
*Gunkanmaki is nori wrapped style sushi, making a small space with the rolling nori on the top of the rice ball and enabling sushi chef to place salmon roe, sea urchin and other things which are something fluid there.

*We use salmon, tuna, egg, cucumber, shrimps, etc for ingredients but they will change depending on the season.

*If you're interested in Japanese sake, plus on fee is JPY 700 per person, please pay on arrival.

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

  • Miso Soup

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

  • Sake

    Sake

    Japanese popular alcoholic drink must be Sake, or called Nihonshu, made from fermented rice. The foundation of good sake is quality rice, clean water, koji mold and yeast. Premium sake differentiates itself in quality of ingredients and production process, so that flavors ranges light and crisp to richer, fruity notes.

Cooking Class Information

Sushi is very popular all over the world. Let's make your own sushi together! The taste which you made must be special.
Our sushi class includes three kinds of sushi (temari, nigiri and gunkan-maki), Japanese omelet and miso soup. Not only enjoying to make sushi but talking and food.

Japanese omelette is very thick and use a special pan. And you can learn how to make authentic miso soup. It's absolutely different from instant one. You will know culture and sushi history, too.

*Please note that my room doesn't suite for little kids. I set up over 10 year old.

*1-3 people are acceptable.

*Solo male participant is not acceptable.

I will meet you at the station so please read my email and reply after booking.

*Harry Potter Museum in Tokyo is about 20 minutes walk from my place.

*Emi’s home in Nerima, she can accept only 1-3 guests:
Meeting location: Meet Emi at Nerima station and then walk for 10 mins from the station to her home. Emi will meet you at in front of the ticket machines of the station. Please note that Nerima has two stations - one station (Oedo line) has 1 exit and the other one (Seibu-Ikebukuro, Yurakucho and Fuku-toshin lines) has 2 exits. Please let Emi know in advance which line you will use, she will send the picture of the meeting point. Or please let her know where you’re staying, so that she can suggest the best route.

For my 16 year old son Julien’s inaugural visit to Tokyo, his intentions were quite unlike my own first trip as an adult, filled with mainstream tourist spots like Mount Fuji and Tokyo Tower. His fascination lay deeper within the veins of Japanese culture - he was eager to go to the “Fast and Furious” car meet and master the art of crafting authentic Japanese sushi. As an American, I was initially baffled. It's akin to attending a 2.5-hour-long class just to make a burger - slap on a bun, grill the meat, sprinkle some condiments, and voila! Yet, when a teenager's wish is on the line, it takes on a life of its own. My wife had shortlisted a couple of options after her research. We were torn between a 100-year-old sushi shop and an actual Japanese home. In the end, we opted for the home experience, wanting to keep it as authentic as possible. Our host was Emi, a native Japanese woman with an ironically western-sounding name. Her friendliness and prompt communication made the rendezvous seamless. Accessible via metro, her home was inviting, and she was incredibly gracious to open her doors to us. She had everything prepared for our sushi-making adventure. We were about to embark on creating three types of sushi: Nigiri, Futomaki, and Hosomaki. Emi showcased the art of sushi making, and it's crucial to emphasize 'art' because the craft was akin to food sculpting. The approach resembled those adopted by master chefs in upscale sushi restaurants, profiling the patrons to determine how 'firm' the rice should be shaped. The rice was prepared from scratch within 10 minutes, and then Emi guided Julien through the art of 'cutting' into the rice, heaped in a large bamboo bowl. The rice vinegar, sugar, and salt added couldn’t simply be stirred in - there was a precise method to it. The delicate process of molding the rice began with the carving of a hole as a starting point, but I won't spoil the magic behind that trick. It was a unique technique designed to affect the shape and firmness. Once done, Emi illustrated how to artfully place the seafood on top. And there you have it, the art of sushi making - a seductive dance that leads to a final delicious ensemble, heightened with the correct dosage of wasabi. But Emi didn't stop at sushi. She also walked us through preparing miso soup and a "Japanese Omelet," or Tamagoyaki. I dare say they were the best we’ve ever tasted. We were so enamored with the process that we ordered a special pan from Amazon upon our return home and have tried our hands at it since. There’s even talk of hosting a sushi party for friends, guiding them through the process we learned in Japan. Emi’s class was an unforgettable experience, which we have taken back with us. For those intrigued by the idea of diving deep into the culture and discovering a culinary art, I highly recommend looking her up. It’s fun.
