This class is available from June with new menu.

This is a short course of 1.5 hours, which starts with a detailed lecture about Japanese fermented foods (especially koji and amazake) then we cook desserts together.

1) Three-color Amazake Jelly: Made with matcha, amazake, and berries, this colorful dessert is both visually appealing and nourishing for the body.

2) Orange Amazake Marinade: A refreshing, light, and gut-friendly dessert that leaves you feeling revitalized.

3) Matcha Amazake Rice Flour Muffin: Made with gentle, gluten-free rice flour. Topped with cherry blossom petals for an extra touch of charm, they’re as cute as they are guilt-free.

4) Sake Kasu (Lees) Cocoa Truffle
Rich in fiber and beauty-boosting benefits, this truffle is made with aromatic sake kasu. Paired with cocoa for a synergistic wellness effect.

Plus, you’ll get to try a sakekasu hand mask that leaves your hand smooth and moisturized.

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

  • Sake

    Sake

    Japanese popular alcoholic drink must be Sake, or called Nihonshu, made from fermented rice. The foundation of good sake is quality rice, clean water, koji mold and yeast. Premium sake differentiates itself in quality of ingredients and production process, so that flavors ranges light and crisp to richer, fruity notes.

The dishes are full of beauty- and health-boosting ingredients, including Japanese superfoods amazake (fermented sweet drink) and sake kasu (sake lees, contain alcohol) have long been enjoyed in Japan. It's so delicious and good for gut health!

The venue is in the heart of Tokyo, and
the class is just 1.5 hours long, making it perfect even for busy travelers!

Fermented foods are so specialized that very few classes exist, making this a one-of-a-kind experience.

Also enjoy a sake kasu hand mask experience. Enjoy the Japanese beauty afternoon tea!

- Please note that the class may take place at a different kitchen location within central Tokyo. In such cases, you will be notified after your booking.

- This experience is best suited for adults and children aged 7 and above, as the content focuses on learning and techniques.

- Please let us know if you have allergen restrictions.

- The ingredient Sakekasu contains around 8% of alcohol. For the age less than 20 and the people who do not drink alcohol, we use banana and make banana raisin cracker instead of cocoa truffle. Please write If there are any less than 20yo participants and/or if you prefer the banana option.

- Minimum participants: 2

Special Promotion : We have another class, "Fermented Food Meal Class" from 11am. If you take both the meal and the dessert classes on the same day, we give you a special gift (rice koji amazake).

Following the fermented food class I took with Naoko, I also signed up for the dessert class to extend my experience and broaden the range of ready-to-use recipes I could make using Japanese fermented ingredients. This class offers the same theoretical foundation as the fermented home cooking class, but with a different tasting session and a fun twist: a focus on how some ingredients can also be used as beauty products. I discovered even more fermented ingredients and flavors, and I proudly made my first dango :) This class is perfect if you have a sweet tooth, but I would highly recommend doing both classes for a more complete experience.
