Ramen with Two Kinds of Soup & Grilled Gyoza
Shoyu (Soy Sauce) Ramen
A soy sauce-based soup made with a rich broth of chicken marinated in shio-koji and fresh vegetables, combined with a special soy sauce tare.

Miso Ramen
A flavorful miso soup made with a broth of Rausu kombu and various kinds of dried fish, enhanced with miso, soy sauce tare, and soy milk.

Grilled Gyoza
Each dumpling is carefully handmade using a filling of freshly minced vegetables and ground pork, then wrapped in a delicate gyoza skin and pan-fried to a crispy finish.

    Ramen

    Ramen is a noodle soup dish and perhaps one of the most popular Japanese dishes. There are many flavours of ramen, such as Shoyu (soy sauce) ramen, Miso ramen, Tonkotsu (pork bone) ramen and so on. Common toppings are Chashu (braised pork), Negi (green onion) and Nori (dried seaweed).

    Gyoza

    Gyoza is a dumpling using wrapping thing dough to hold the inner ingredients. Most commonly, minced pork, cabbage, Garlic and Leek. The origin of Gyoza is from China but it has evolved uniquely in Japan and now quite different from the Chinese one.

  • Miso Soup

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

* You will experience making two kinds of ramen and grilled gyoza, and enjoy eating them right away.
* The two types of ramen are: (1) Soy Sauce Ramen, (2) Miso Ramen.
* All dishes are easy to make.
* You will cook together with an English-speaking instructor.
* The lesson lasts about 2 hours.
* You'll receive the full recipes for all dishes.

In our workshops, you will learn the traditional home-style cooking that Japanese people eat on a daily basis in the natural setting of Arashiyama, Kyoto. We use fresh local vegetables and provide recipes that are easy to reproduce. A husband with 25 years of experience as a chef and a wife who loves nature and vegetables will support you carefully and with an emphasis on eco-friendly and sustainable living.
