Forget the idea that vegan food is light or plain.

We spent several months perfecting a 100% plant-based broth that rivals the richness of Tonkotsu (pork bone) soup.

Using Kombu (kelp), Shiitake, and fresh Kyoto vegetables, we created a "Secret Umami Broth" that is full of flavor.

What you'll make:
Two types of rich ramen broth & Crispy Gyoza from scratch.

Perfect for:
Everyone! Vegans, Vegetarians, and omnivores who love delicious food.

Note:
100% Dashi-free & Plant-based.
Gluten-free options available.

Welcome to
Kyoto Green Cuisine.

Not Just "Vegan Friendly."
Simply, The Best Ramen You've Ever Had.

"Here is a secret:
We are not vegans.

We are passionate foodies who love meat, fish, and rich flavors.

When we first tried to create a vegan ramen, we were disappointed.

Most vegan options lacked depth and 'Umami.

' We didn't want our guests to think, 'It's good... for vegan food.'

We wanted them to say, 'This is the best ramen I've ever tasted!'

So, we went back to our kitchen in Arashiyama.

We used our 30 years of culinary experience to craft a broth from scratch, layering Kombu (kelp), Shiitake, and local Kyoto vegetables until we achieved a richness that rivals any meat-based soup

Whether you are vegan, vegetarian, or a meat-lover, we promise you one thing:

You won't miss the meat. You will only taste the joy of authentic Japanese cuisine.

Come hungry, and leave with a recipe that will change your home cooking forever."

The cooking class with Satoru and Akiko was one of the highlights of our trip! We learned -step by step - how to make two different types of ramen and also the best Gyozas we have had in Japan. We were able to do most things ourselves!! We were also given the recipes typed out to take home. It was a great half-day, because we had the great cooking lesson and then were able to spend some time in the beautiful area where they live: Arashiyama. Everything was easy, to get there and Akiko was waiting for us at the station. Very, very recommended!!
