Vegan Shoyu Ramen (Soy Sauce Broth Ramen)
A classic Japanese noodle dish! We use a rich, savory broth made from traditional Japanese soy sauce and vegetables. It has a deep umami flavor without using any animal ingredients.
Vegan Miso Ramen (Miso Broth Ramen)
A rich and comforting Japanese classic! We create a deep, savory broth using traditional fermented miso paste blended with slow-simmered vegetables, kombu, and shiitake mushrooms. The result is a beautifully balanced bowl with robust umami and a gentle sweetness, all completely free from animal ingredients. Perfectly satisfying and full of authentic flavor.
Vegan Gyoza (Pan-fried Dumplings)
Crispy on the outside and juicy on the inside. These pan-fried Japanese dumplings are packed with a delicious mix of fresh vegetables and savory seasonings.
Prepare the toppings.
We use vegetables and tofu to make the toppings.
Prepare the soy sauce and miso soup.
We make the soup without using any animal products.
Prepare the gyoza filling.
We finely chop the vegetables and mix them with tofu and seasonings.
Wrap the gyoza filling.
We carefully wrap the filling in gyoza wrappers.
Cook the gyoza.
We cook them until the outside is crispy and the inside is soft.
Boil the ramen noodles.
We boil vegan and gluten-free noodles.
Plating the dish.
We arrange the food beautifully and appetizingly.
Enjoy the freshly prepared dish.

Upon arrival at the home, you will first be given a cup of green tea to relax and then a brief introduction to the cooking class.

Learn how to make two different types of ramen soup: soy sauce soup and miso soup.
Create vegan gyoza filling and wrap with premade wrappers.
Vegan gyoza are steamed and cooked until fragrant.
Boil the noodles, add the soup, and top with the toppings.
In our workshops, you will learn the traditional home-style cooking that Japanese people eat on a daily basis in the natural setting of Arashiyama, Kyoto. We use fresh local vegetables and provide recipes that are easy to reproduce. A husband with 25 years of experience as a chef and a wife who loves nature and vegetables will support you carefully and with an emphasis on eco-friendly and sustainable living.
