Zaru Soba & Wagyu Sushi & Matcha
Chilled buckwheat soba with homemade tsuyu, Wagyu maki sushi, and a matcha finish.

Please inform us of any food allergies when booking. Note on Soba (Buckwheat): We serve soba noodles in this class. As buckwheat is present in our kitchen, we cannot guarantee a cross-contamination-free environment. For your safety, we do not recommend this class for guests with severe buckwheat allergies. Our menu also includes soy and wheat (in soy sauce and miso). Please contact us in advance for gluten-free or substitution requests.
Zaru Soba (Chilled Buckwheat Noodles)
Prepare the dipping sauce.
Boil the soba noodles.
Once cooked, rinse them in cold water.
Drain the water using a colander and place the noodles in a bowl.
Serve with the dipping sauce and condiments.
Nigiri Sushi
Cook the rice.
Make sushi rice.
Prepare the fresh fish.
Shape the sushi rice into balls.
Add wasabi.
Place the fresh fish on top to make nigiri sushi.
Wagyu Maki Sushi
Cook the rice.
Make sushi rice.
Place nori seaweed on a bamboo mat and spread the sushi rice over it.
Add wagyu beef, etc.
Roll up the sushi.
Let it sit for a while before cutting.
Matcha (Premium Green Tea)
Preparation
Cool the water to the right temperature
Warm the bowl and soften the whisk
Wipe the bowl completely dry
Whisking
Pour the water
Blend gently at first
Whisk briskly using your wrist
Smooth the foam
Remove the whisk
Warabi Mochi (Traditional Japanese Jelly Sweet)
Heat the ingredients in a pot to make warabi mochi.
Cut the warabi mochi into bite-sized pieces.
Place in a bowl and sprinkle with kinako (roasted soybean flour) and kuromitsu (brown sugar syrup).
In our workshops, you will learn the traditional home-style cooking that Japanese people eat on a daily basis in the natural setting of Arashiyama, Kyoto. We use fresh local vegetables and provide recipes that are easy to reproduce. A husband with 25 years of experience as a chef and a wife who loves nature and vegetables will support you carefully and with an emphasis on eco-friendly and sustainable living.
