  • Karaage

Japanese fried chicken, karaage is made by marinating bite-size pieces of chicken in sake, soy sauce, ginger and garlic before coating them generously with potato starch. When fried, the starch turns into an ultra crispy shell encasing a flavorful juicy bite of chicken. Absolutely great with beer.

  • Rice

Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

  • Miso Soup

    Miso Soup

Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

Cooking Class Information

Omurice is one of the most popular Japanese foods because of its cute appearance and amazing taste.

Omurice is a Western-style Japanese food, which is chicken rice wrapped in omelette and demi-glas sauce on it.

Omurice rice usually uses eggs, but in my cooking class, yuba(Tofu sheet) is used instead of eggs, so it can be enjoyed by vegan people.

In addition, we make Karaage for vegan using soybeans instead of chicken.

Reviews of Cooking Class

Sofia, Sweden

Cooking with Naoki was very fun! We met up at the nearest station and walked for about 10 minutes to Naokis home, a traditional japaneese apartment, where we felt very welcome. Naoki is defenitely a generous host. Naoki didn't speak english and we knew next to no japaneese, but thanks to Akiko, who joined us, we were able to have a lot of fun cooking and have great conversations. We learned a lot of interesting things about vegan cooking and being vegan in Japan. It was fun comparing to how it is in our own country, Sweden. After cooking, some of Naokis friends joined us for dinner. All in all it was a very warm and fullfilling experience. Thank you very much!
