In this class, we will make Kyoto-style "Chukasoba"（Japanese-rakuen ）.
Chinese noodles are used in place of udon, and "konbu"（Kelp） and "Katsuo"（bonito）broth soup that tastes like a udon store in Kyoto.
Ingredients will have a lot of sweet "Kitune"（"Oagenotaitan"fried Tofu）
and Kujo leek.
You can also enjoy Kyoto-style Tsukimi Chuka-soba（Japanese-ramen）with eggs if you like.

This is a dish with a unique soup stock from Kyoto.
I was born and grew up in Kyoto.
I would like you to taste the taste of vegetables and rice which are harvested in this place.
I believe that Japanese food should be casual and daily food. So I want to cook with the japanese dish whichi is focused on the taste od the material itself, harvested for local cconsumption and healthy for your body.
