    Tempura

    Tempura (天ぷら) is a classical Portuguese dish brought to and popularized by Japan, consisting of seafood or vegetables that have been battered and deep fried. Tempura is a typical home-style cooking in Japan. It is often referred to as a representative dish to Japan. Although there are various theories, it is said that Tokugawa Ieyasu, the general of the Edo period, liked tempura so much that he allegedly died from eating too much.

  • Udon

    Udon

    Udon (うどん) is a type of thick wheat flour noodle. It is similar to Italian pasta, but much thicker. It has been eaten all over Japan as an easy-to-eat popular meal, and a substitute meal for rice dishes. Udon is often served hot as a noodle soup in its simplest form, as "kake udon", in a mildly flavoured broth called kakejiru, which is made of dashi, soy sauce, and mirin. The flavor of broth and topping vary from region to region.

Once you master these recipes and serve udon at home, your guests will be amazed at the authentic taste of udon.
Udon is made by kneading wheat flour with salt and water to form a lump.
Udon is a typical Japanese noodle dish as well. It is a very simple noodle made from salt, flour, and water.
Kneading the dough and stamping it with your feet. It is very fun. And seasonal tempura. I also teach you how to make Japanese dashi.
It's very fun. You will also experience Japanese hospitality that you cannot experience anywhere else. I will write your name in kanji.

We learned how to make the udon noodles, how to prepare tempura batter correctly and fry our veg/shrimp, and of course the tamagoyaki (rolled omelette) using her mother’s recipe. We were given a tamagoyaki pan to take with us so we could make them at home. I’d recommend showing up a bit early as the main street is really cute with many small shops, cafes, restaurant. Artwork on the walls is super cool. The class takes place in her working studio which is in a suburban neighborhood.

Learning how to make Udon with Masako was an absolute pleasure. She was communicative and helpful and I came out with beautiful looking Udon. In total we made udon, tempera, and an tamago roll. Things did feel a bit rushed and if possible the pacing should be slowed down a bit, though that may be hard with everything that is being made during this session. Masako sent me her recipe afterwards and I hope to replicate things at home once more! I would absolutely recommend others to learn from Masako!
