  • Ramen


    Ramen is a noodle soup dish and perhaps one of the most popular Japanese dishes. There are many flavours of ramen, such as Shoyu (soy sauce) ramen, Miso ramen, Tonkotsu (pork bone) ramen and so on. Common toppings are Chashu (braised pork), Negi (green onion) and Nori (dried seaweed).

  • Gyoza


    Gyoza is a dumpling using wrapping thing dough to hold the inner ingredients. Most commonly, minced pork, cabbage, Garlic and Leek. The origin of Gyoza is from China but it has evolved uniquely in Japan and now quite different from the Chinese one.

  • Rice


    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

  • Sake


    Japanese popular alcoholic drink must be Sake, or called Nihonshu, made from fermented rice. The foundation of good sake is quality rice, clean water, koji mold and yeast. Premium sake differentiates itself in quality of ingredients and production process, so that flavors ranges light and crisp to richer, fruity notes.

50g High gluten flour (usually using for bread)
15g Row gluten flour (for cake)
5g salt
1 egg
3g baking soda

★For soup

250g chicken wings
1glove of ginger
2 glove of gallic
20g celery
20g green onion (green part)
black pepper
Soy sauce,mirin(brown sugar)
fish oil/ 1 shrimp shell (if possible)

★For Ramen Topping

50g chicken breast
1 glove of garlic
1teaspoon salt sugar,
1pinch of black pepper

a little of garlic
1table spoon soy sauce and mirin(or brown sugar)

30g beans sprout
a little of green onion

★For veggie soup needed sea kelp

The ramen masterclass was really great fun! Nahoko is very very knowledgeable and approachable. It felt like having lunch with friends. The food was tasty, the instructions clear and easy to follow, definitively something I can try again at home. The highlight for me was how juicy and moist the chicken was!! Absolutely recommended.
