Cooking Class Menu

1 Miso Ramen
When you are in Japan, you will learn that Ramen have three basic flavors, Salt,Soy sauce and Miso(fermented soy bean paste).
Making good Ramen soup from scratch requires a lot of time.
In my class, I'll teach you how to make a delicious home made Ramen soup easily.
And the ingredients are arranged simply to find out in stores such as Miso, Minced pork and Onion etc.
And then we will make Ramen noodles from scratch by using a traditional noodle knife and our feet.
All the progress is very interesting for everyone.
Fresh curly noodles are smooth and chewy.

2 Fruits Daifuku
Daifuku is a typical Japanese sweet that has been eaten on a daily basis for a long time. Recently, fruit daifuku, which is made by wrapping delicious seasonal fruits such as strawberries, mandarin oranges, and figs in white bean paste and sweet rice cakes, has become popular.

3 Local market tour

Omori is a town located just outside the center of Tokyo, where many Japanese people reside. In the past, seaweed farming was popular due to its proximity to Tokyo Bay.

I live in Omori, which is a residential area characterized by a mix of old small shops and some of Japan's largest supermarkets. On the way from the station to my house, you can visit various shops, including supermarkets, where I can introduce you to Japanese ingredients and seasonal items. This experience will undoubtedly provide you with a glimpse into real life in Japan, showcasing a culture distinct from Shibuya and Asakusa.

If there's anything that catches your interest, I believe it would be a great idea to do some shopping on the way back home after class.

Menu requests are welcome!!
If there are any specific Japanese dishes you would like to learn how to cook, please let me know.

  • Ramen

    Ramen

Ramen is a noodle soup dish and perhaps one of the most popular Japanese dishes. There are many flavours of ramen, such as Shoyu (soy sauce) ramen, Miso ramen, Tonkotsu (pork bone) ramen and so on. Common toppings are Chashu (braised pork), Negi (green onion) and Nori (dried seaweed).

  • Rice

    Rice

Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

Cooking Class Information

All my classes are private classes.
Therefore, I will carefully explain each step, one by one. Additionally, while cooking, I will share stories about Japanese food and daily life in Japan. Feel free to ask any questions you may have during your trip or anything about Japan you'd like to know.

We make curly Ramen noodles and soup from scratch in this class.
After spreading salt water whole of flour, kneading the dough by your feet and a pasta machine both.
That work is so fun for everyone.
And you will be definitely surprised at the freshness and smoothness of homemade Ramen noodles.

And next, we will make Miso Ramen soup by simple ingredients as below.
Chili bean sauce and Miso make Ramen soup full of flavor.
Top the Miso Ramen with a soft boiled egg, corn and vegetables and the homemade Miso Ramen is finally done.

In my class, I will introduce simple recipes that participants can make even after going back to your country. I think it will be a very exciting and valuable experience to wrap fruit in freshly made hot and sticky rice cakes.

Moreover, the unique process of cutting the freshly made fruit daifuku using a thread, which is challenging with a knife, adds to the excitement. Why not create photogenic Japanese sweets?

Let's enjoy making home made delicious Miso Ramen and Fruits Daifuku along!!

My wife and I had an amazing time with Junko-san!! Her tour through the neighborhood was so informative and we appreciated the opportunity to see the real side of Tokyo, not just the tourism. The cooking class was so fun!! She is an excellent instructor and speaks very good English as well! The food we made together exceeding expectations. Junko-san was so much fun and enjoyable to be around. This was definitely a highlight of our trip and highly recommend the experience!

Junko was fabulous! She personally toured us around her neighborhood, taking us through tea shops, sweet shops and supermarkets before inviting us into her home to make ramen and daifuku from scratch. Her instruction was clear and the results amazingly delicious. We are plant-based and she made the menu fit us with ease. Cannot recommend her enough!

I highly recommend Junko's ramen and mochi cooking class for your next visit to Tokyo. She took us on a culinary tour around her neighborhood, including through the grocery store. Then she treated us to a green tea tasting and sweet treats. Of course the noodles and strawberry daifuku were amazing and now we can try to make them again back at home. Junko is a gracious and generous host and teacher.

Junko was an amazing host! Getting shown around town and introduced to ingredients/sweets/teas/etc was awesome! Junko had a lot of knowledge they kindly shared, and was very skilled at driving the conversation and hosting guests. The food we made was some of the best food we had during our trip, and getting to taste many various ingredients alone was something I will really remember as I go back home and shop for foods. Overall, the experience was incredible and we will happily sign up for her class again. Thank you Junko for making our trip special!

Hello everyone My partner and I experienced Junko’s ramen and fruits daifuku cooking class last week while we were in Tokyo. We both had a wonderful time and learnt a lot - about cooking and Japanese way of life. Junko was such a friendly and fun person to spend a day with! She was patient and informative as she took us through the class, and the end result was a delicious lunch. An extra treat was the tour of her amazing local supermarket, where we were able to purchase some items as souvenirs following Junko’s recommendations. We will definitely look forward to making ramen when we get back home to Australia. I have no hesitation in recommending Junko’s class to other travellers who are keen for a local experience and yummy homemade meal while they’re in Tokyo. Thank you Junko!

We had an amazing cooking experience with Junko. Our family with two teens did the ramen and dessert class with a guided visit to the local stores and finished with a bonus calligraphy session! Junko is so kind and welcoming. She reached out to me after the booking and continued to check in to ask about dietary requirements via what’s app and email. We meet her at her local station and had an opportunity to walk through local stores and learn more about Japanese food and culture. Once at her beautiful home, we started cooking! She was so patient with my kids and made the entire experience very educational and fun. It was like we were old friends catching up! We enjoyed our home cooked lunch and dessert together. She kindly included some extra food (sushi) to make it an enjoyable experience! She then took extra time for a calligraphy class which the kids really enjoyed. After the class she also sent us a few restaurant recommendations and checked in on us when Typhoon was approaching later on our trip. Junko is warm, kind and funny. The cooking class was our highlight and it felt like we had connected with an old friend! I highly recommended this personal and private opportunity to learn more about Japanese culture and food. Thank you Junko!

It was such a wonderful experience! Not only was Junko incredibly accommodating for the dietary restrictions of our party (vegetarian and food allergies), she was absolutely delightful company. There was never a dull moment in the entire process and we learned so much from her. I can wholeheartedly recommend this experience, and we will most definitely be coming back.
