  • Ramen

    Ramen

    Ramen is a noodle soup dish and perhaps one of the most popular Japanese dishes. There are many flavours of ramen, such as Shoyu (soy sauce) ramen, Miso ramen, Tonkotsu (pork bone) ramen and so on. Common toppings are Chashu (braised pork), Negi (green onion) and Nori (dried seaweed).

  • Gyoza

    Gyoza

    Gyoza is a dumpling using wrapping thing dough to hold the inner ingredients. Most commonly, minced pork, cabbage, Garlic and Leek. The origin of Gyoza is from China but it has evolved uniquely in Japan and now quite different from the Chinese one.

  • Tea Ceremony

    Tea Ceremony

    The Japanese tea ceremony is a centuries-old tradition closely tied to Zen Buddhist principles, and a popular way to experience Japanese culture. There are several variations on this ritual. At its base, powdered green tea (matcha) is prepared and served in accordance with strict rules. Oftentimes, wagashi (Japanese sweets) is served alongside the bitter green tea.

Ramen
Please make the ramen from the soup.
Miso ramen soup is made from my homemade miso , which is aged for about 10 months.
Soysouce ramen is topped with cha-shu , which is prepared over two days.

Gyoza
The Gyoza is handmade from the Gyoza skin.
The Gyozas are wrapped in the skin made by mixing the ingredients and cooked. I will teach you how to cook crispy gyoza.

Japanese sweets will also be handmade.
you make wagashi that match the seasons in Japan.

Finally, I will have you drink "Matcha". You can make a bowl of matcha by yourself.


What you will do


Meet at station!

1. Meet at station!

Please take  OsakaMetro Midou line to Momoyamadai station. It takes 30 mins from Nanba station. In front of south ticket gate at Momoyamadai station. Exit the south ticket gate to the right and walk straight. I'll be waiting at the top of the stairs 15mins before the starting time

2. Welcome drink and explain about my cooking class

You can choose drink from either green tea, water or Japanese Sake! I will explain you about what we are going to make according to my recipe. I will give you my recipe as a gift!

3. Cook Ramen

you cut the vegetables and fry them with the meat.

Make Gyoza

You make dumpling skins. Please wrap the seasoned ingredients and bake.

Make Japanese sweets

5. Make Japanese sweets

You roll the red bean paste and wrap it in rice flour. Please decorate by topping with soybean flour.

I had a wonderful time at Keiko-san's! She was thoughtful, experienced and kind. There's lots to get through so she has preprepared most ingredients already, that way you can get straight into making the dishes. You'll receive a recipe during the session which covers the whole process so even if you do not get to do a particular part, you'll be able to recreate it at home. My favourite bit was sitting down together afterwards and eating all our yummy food we made (make sure you go with an empty stomach). It was really lovely as it allowed for us to talk more about Japanese food/culture. The tea ceremony was also a really lovely experience that I would recommend to anyone!
