    Ramen

    Ramen is a noodle soup dish and perhaps one of the most popular Japanese dishes. There are many flavours of ramen, such as Shoyu (soy sauce) ramen, Miso ramen, Tonkotsu (pork bone) ramen and so on. Common toppings are Chashu (braised pork), Negi (green onion) and Nori (dried seaweed).

  • Gyoza

    Gyoza

    Gyoza is a dumpling using wrapping thing dough to hold the inner ingredients. Most commonly, minced pork, cabbage, Garlic and Leek. The origin of Gyoza is from China but it has evolved uniquely in Japan and now quite different from the Chinese one.

  • Tea Ceremony

    Tea Ceremony

    The Japanese tea ceremony is a centuries-old tradition closely tied to Zen Buddhist principles, and a popular way to experience Japanese culture. There are several variations on this ritual. At its base, powdered green tea (matcha) is prepared and served in accordance with strict rules. Oftentimes, wagashi (Japanese sweets) is served alongside the bitter green tea.

Ramen
Please make the ramen from the soup.
Miso ramen soup is made from my homemade miso , which is aged for about 10 months.
Soysouce ramen is topped with cha-shu , which is prepared over two days.

Gyoza
The Gyoza is handmade from the Gyoza skin.
The Gyozas are wrapped in the skin made by mixing the ingredients and cooked. I will teach you how to cook crispy gyoza.

Japanese sweets will also be handmade.
you make wagashi that match the seasons in Japan.

Finally, I will have you drink "Matcha". You can make a bowl of matcha by yourself.

Please take  OsakaMetro Midou line to Momoyamadai station. It takes 30 mins from Nanba station. In front of south ticket gate at Momoyamadai station. Exit the south ticket gate to the right and walk straight. I'll be waiting at the top of the stairs 15mins before the starting time

You can choose drink from either green tea, water or Japanese Sake! I will explain you about what we are going to make according to my recipe. I will give you my recipe as a gift!

You make dumpling skins. Please wrap the seasoned ingredients and bake.

The gyoza were the perfect complement to the ramen and a testament to her clear instruction. Following the savoury dishes, we delved into the serene world of the Japanese tea ceremony. Keiko expertly demonstrated the graceful movements and explained the significance behind each step. It was a calming and introspective experience, a perfect way to end our culinary journey. I forgot we also made the pineapple daifuku, which was heavenly. I think I can make it at this menu at home with practice. This cooking class was more than just learning recipes, it was a glimpse into Japanese culture and hospitality. Keiko was a fantastic instructor, knowledgeable, friendly, and always happy to answer our questions. She also speaks English well. The meeting point is easy to get to, directly north on the Midosuji line. She picked us up and was so welcoming and hospitable from the start. We made two types of ramen, gyoza, and strawberry daifuku. Both the soy sauce and the miso ramen were leagues better than a lot we had in Dotonburi - so simple but so rich in flavor. The miso paste we used was also homemade by Keiko, over the course of 10 months. We are excited to take all of these recipes home! For dinner, Keiko also shared a few other homemade concoctions to pair with everything we made, including a sweet lime juice, yuzu lemon pepper. We finished the dinner with a matcha tea ceremony. I had a wonderful time at Keiko-san's! She was thoughtful, experienced and kind. There's lots to get through so she has preprepared most ingredients already, that way you can get straight into making the dishes. You'll receive a recipe during the session which covers the whole process so even if you do not get to do a particular part, you'll be able to recreate it at home. My favourite bit was sitting down together afterwards and eating all our yummy food we made (make sure you go with an empty stomach). It was really lovely as it allowed for us to talk more about Japanese food/culture. The tea ceremony was also a really lovely experience that I would recommend to anyone!
