The soup stock is made from vegetables, kelp, and shiitake mushrooms.
Topped with seasonal vegetables such as kurumafu and bean sprouts.
Vegan ramen seasoned with traditional Japanese seasonings.

〇 Vegan gyoza
We make gyoza wrappers from scratch.
Ingredients include cabbage, chives, tofu, etc.

For gluten-free menu items, the wrappers are made from rice flour.

    Ramen

    Ramen is a noodle soup dish and perhaps one of the most popular Japanese dishes. There are many flavours of ramen, such as Shoyu (soy sauce) ramen, Miso ramen, Tonkotsu (pork bone) ramen and so on. Common toppings are Chashu (braised pork), Negi (green onion) and Nori (dried seaweed).

  • Gyoza

    Gyoza

    Gyoza is a dumpling using wrapping thing dough to hold the inner ingredients. Most commonly, minced pork, cabbage, Garlic and Leek. The origin of Gyoza is from China but it has evolved uniquely in Japan and now quite different from the Chinese one.

  • Rice

    Rice

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

You can learn how to make ramen soup together. We will explain the seasonings that have been used since ancient times in Japan, and give you a recipe that you can recreate when you return to your home country.

〇 Gyoza
Make gyoza skins, stretch the skin with a small cotton swab, and wrap the ingredients. Then fry the gyoza.

Nice to meet you! I'm Makiyo.
I run a vegan cooking class at my home near Osaka Castle.
I've been studying French pastries as a job for 25 years.
When I lived in France, I realized how wonderful the Japanese food culture was, and now I'm interested in traditional Japanese koji and am studying fermented foods in depth.
Also, recently, when a vegetarian friend came to Osaka, she had a hard time choosing a restaurant. She realized that there are still fewer vegan restaurants in Osaka than in Tokyo.
That's why I'm running a cooking class that specializes in vegans. It's not as formal as a classroom, so we offer Japanese home cooking and sweets that even people with food restrictions can enjoy, as if they were coming to visit your home.

We had a delightful evening with Makiyo and her partner! Makiyo is a passionate and experienced chef who takes pride in creating and teaching about healthy and mouth-watering dishes. We were wholeheartedly welcomed in their home and were walked through all the ingredients and the steps of the two dishes. We loved that many of the ingredients were home made, such as the onion koji and miso paste. It was fantastic she is able to adapt for vegan and gluten-free without compromising taste. Apart from the cooking we shared interesting discussions about our lives, nutrition etc. She is studying the science of fermentation which is quite inspiring and interesting. We highly recommend this class to anyone wanting to explore plant-based traditional Japanese cuisine!
