You’ll make authentic Japanese miso, prepare rich homemade miso ramen, and make crispy handmade gyoza from scratch, including the wrappers.

For dessert, you’ll make traditional Japanese sweets (wagashi). To finish the class, you’ll prepare and enjoy your own bowl of matcha.

    Ramen

    Ramen is a noodle soup dish and perhaps one of the most popular Japanese dishes. There are many flavours of ramen, such as Shoyu (soy sauce) ramen, Miso ramen, Tonkotsu (pork bone) ramen and so on. Common toppings are Chashu (braised pork), Negi (green onion) and Nori (dried seaweed).

  • Gyoza

    Gyoza

    Gyoza is a dumpling using wrapping thing dough to hold the inner ingredients. Most commonly, minced pork, cabbage, Garlic and Leek. The origin of Gyoza is from China but it has evolved uniquely in Japan and now quite different from the Chinese one.

Cooking Class Information

Make Your Own Miso

Learn how to make traditional Japanese miso by crushing boiled soybeans and mixing them with rice koji and salt. You’ll take home approximately 250g of the miso you make to continue fermenting at home.



Homemade Miso Ramen

Use homemade miso to prepare a rich and flavorful bowl of authentic miso ramen.



Handmade Gyoza

Make authentic Japanese gyoza from scratch, including the wrappers. I’ll teach you how to make crispy, pan-fried gyoza.



Fruit Daifuku

Make traditional Japanese sweets using fresh fruit, sweet white bean paste, and soft mochi.



Matcha Experience

After the meal, I’ll demonstrate a casual Japanese tea style. Then you’ll prepare and enjoy your own bowl of matcha.

Keiko has been an amazing host for my first ever cooking class in Japan. As a solo traveller, it was a bit challenging to find a cooking class here in AirKitchen that accommodates less than 2 people. Also, I have some experience in a Japanese kitchen so my requirements for a class are a bit more specific. Although there was a bit of a language barrier between us, (I speak mostly English and she mostly Japanese) Keiko has been very supportive, accommodating and the communication between us through the class felt like there was not even a barrier between us to begin with! This is what we made: Miso from scratch - She explained the purpose of fermentation and the best seasons to start making miso along with the results depending on the length of the fermentation periods. Miso Ramen - Delicious, simple, complex flavors and I still think about it to this day Pineapple Daifuku Mochi (Fruit varies) - We made this from scratch together! Keiko was really supportive as I try my best to form the mochi with my fat, clumsy fingers Tea Ceremony with Matcha - Keiko explained the small steps and intricacies of a proper tea ceremony - Present and eat sweets (daifuku we made earlier) to balance the bitterness of the matcha - She went down to details of the small gestures required in the tea ceremony as well. After the lesson, we both had a really pleasant lunch together with the food we made. Afterwards, she gave me some homemade miso to bring home. I live in the USA and was able to bring it through customs! When I go back to Japan, around Osaka area, I will definitely sign up for another class with her! I will always recommend Keiko’s cooking classes to anyone in the area, regardless of cooking experience.
