It ended up being so hot outside that Nahoko suggested we change over to Tsukemen instead of ramen. It was a good choice. Nahoko welcomed us into her home and took great care to make us feel comfortable. She explained the science and history of flavor, the process we would use to make our Tsukemen, and why each step was necessary. We not only made the broth over the course of the class, but also hand made the noodles. While English wasn't a problem for Nahoko, she was very kind to also let me practice some Japanese with her as we cooked. She was very patient and had lots of insightful tips. We really enjoyed this class and hope to stay in touch with Nahoko in the future. Would highly recommend this class to anyone interested.

We are bloggers by hobby and have reviewed over 80 bowls of ramen in Japan from the Michelin stars to back alley joints. The ramen cooked in Nahoko sensei is really good and made us felt like yea! I can do it in my kitchen too! Sensei takes her time in teaching and we never once felt rushed. She carefully explains some of the history and science behind making a bowl of good ramen, and also healthier version as she explains why she swap certain ingredients out, etc. Overall, we recommend going for this over other fancy cooking in the shop or with a professional chef type of class if what you really want is to be able to cook this when you return home.

My partner and I love Ramen and wanted to do the course to learn more about the approach to cooking it. Nahoko started with introductions and a nice cup of tea. We then got a great in-depth explanation about what we were going to be cooking and the ingredients behind what makes the dish so good. We then started with prepping the broth and making the Noodles and boiling the eggs. Overall a great experience and enjoyed every minute. It was about a 4 hour class which was perfect and the ramen did not disappoint. I can't wait to go back home to make it.

★★The cooking class with Nahoko was a slog. I would not recommend it. To summarize, it was 5 hours of doing very little except watch her cook, all the while you’re bored and starving since you only eat one bowl of ramen at the very end. We arrived and she was very particular about how to take off our shoes, how the shoes should be oriented, and snapped at you if you didn’t do it right. I went with my partner and there were 4 other people total but she didn’t do anything to break the ice or introduce everyone. There was also no music the entire time, so it was not lively. She also has a bold rule she sends ahead of time “Please stop your private talk when cooking” so people were afraid to talk, making it awkwardly quiet. The most crucial part of how to make the broth she had already made mostly herself overnight without you getting to learn that part. She made us pay extra for vegetarian which I do not understand nor think is fair. She made us kneed our basic noodle dough for over an hour and then jump on it on the ground in a zip lock bag. Everyone’s dough split the zip lock bag and touched her dirty floor. Totally unnecessary and non nonsensical. I wanted to learn professional techniques but she is not a professional. She has never worked in a restaurant. No one would ever jump on dough on the ground and if she thought it’s fun, it wasn’t. For a 5 hour class there needs to be more than just a single bowl of ramen as the result. Everyone was losing their minds with hunger. Would be so easy to make something as easy as edamame along the way, but nope. She pressured everyone to leave a review, so I feel bad writing this, but it was the experience.

To prepare the noodles was really fun for us. We were a group of 7 people, that’s why it was a bit crowded, what was still ok. But I had the impression that Nahoko was a bit stressed with preparing the broth for the ramen by herself and explaining the preparation for the different kind of groups (vegetarian, gluten free and regular). The space is small and she had to prepare 2 different kind of broths. Nahoko was willing to explain all her steps, but I would have preferred to cook it by myself. Especially when it comes to season the broth. I got the feeling to miss something at that point. The final ramen were delicious for sure and I’m looking forward to try it at home. After excellent communication ahead of time and clear directions to her home (which included photographs of landmarks along the way), we were greeted with hospitality and grace by Nahoko. Our ramen class was four hours long and we shared the space with a nice couple from Australia who had traveled the world. Conversation was interesting and Nahoko’s ease with answering all of our questions was fascinating. Her ability to explain Japanese culture and food was a highlight. Our final product- our handmade ramen noodles in a delicious umami broth, with marinated boiled eggs and delicious veggies- was a great way to end our class. Highly recommend this experience.

★★★★★The cooking class was excellent! We made ramen dough from scratch, slow cooked chicken, soft boiled eggs, and two different gyoza fillings. I really enjoyed how the class was structured. We spent a lot of time making the pasta noodles and filling the gyoza, and I now feel very comfortable with both of these skills. It was great to get a refresher on using a pasta roller, and I'd never used the smallest noodle setting before. I've made gyoza before on my own and didn't expect to learn very much from this part of the class. But Nahoko shared many tips and tricks to get the filling and frying just right. I'm very excited to make gyoza again with these additions. Her filling recipes are also really delicious. Nahoko made the ramen broth before we arrived (I know it has to cook for a long time), but we got to add a few things to the broth, so it felt like we were still contributing to it. The class took about 4 hours, and we were busy the whole time. That's about the maximum amount of time I can pay attention. The class was well structured and I'm not sure how to improve the timing. We spent a lot of time on things that require practice (like filling gyoza), and got to watch many things that were very quick (like the chicken and eggs). The class gave us a very good understanding of both dishes, and I look forward to making them at home. Thanks, Nahoko!!

I always say,”you can taste when food is made with love,” and this was no exception. Arriving to Nahoko’s class was simple. She provided detailed instructions and it was hard to miss her cute yellow house. She quickly brought us in and had tea ready for us at the table. Her utensils and dishes were beautiful. Before the cooking started she explained to us the importance of washing our hands. I cannot agree more with stressing this concept as my partner and I deal with patients and this is a crucial part of reducing infections. We first started on the gyoza. My partner was having a little bit of a struggle making his pleats but she gave him encouragement to go through it and would reexplain the steps to him. We ate the gyoza afterwards and had a nice chat. Now we were starting on the ramen. She explained the importance of the broth. She stressed how she liked to use natural ingredients from even the start of the class. Restaurants will use MSG or farm raised shrimps which she tries to stay away from because it will not only change the flavor, but will affect your heath in the long run. We made the noodles, tossed it into the boiling water, rinsed it off and then into the broth. She told us to eat the ramen in 8 minutes. My partner and I could have probably ate it in less. The most delicious refreshing ramen. Nahoko was an amazing teacher and I would recommend her class to anyone. It was a memorable part of our trip. She was considerate of our dietary needs. She spoke very well English. When I left I had such an urge to hug her before I left because this experience was like being at home in a different country, Nahoko’s home.

★★★★★Nahoko is a very gracious host. She responded to my messages in a timely manner and even provided me the most efficient train route from my hotel to her home. I had no problem navigating with her directions. I had a wonderful time learning how to make Japanese food. Nahoko answered all my questions and now I have a new skill to share with my friends and family. Nahoko also printed out all instruction for me to take home. My experience was more than learning to cook, but being able to interact with a Japanese friend and enjoy the cultural differences. I would highly recommend to spend your afternoon with Nahoko and cook some great food.

★★★★★Brilliant afternoon cooking gyoza and ramen with Nahoko. We booked very last minute at 9pm the night before and Nahoko was kind enough to move her schedule around to fit us in. The instructions were well explained and the food tasted delicious. Nahoko walked us back to the train station after the class and when we didn't have enough cash she generously gave us the extra money so we could buy the tickets. All in all a great, authentic experience and one of our highlights from Tokyo.

Even though we were late, the class took place and after it she brought us to a local super market to buy some ingredients we used for cooking. Nahoko is polite, funny and so welcoming that I can just highly recommend to take her class. You will learn to cook ramen in the traditional way with natural ingredients. I never thought that I would have been able to make tasty, restaurant quality ramen with a homemade feel like I did when I was there. Nahoko can speak English and Japanese , which is a real help for tourists who want to jump in to an authentic Japanese home and learn as much as possible. Her instructions are easy to follow for a beginner , but not too basic for a more advanced student. Take her class, you’ll be surprised at what’s you can do.
